Eggplant and Greek Yogurt Dip

Today we bring a plate of 10! Healthy, nutritious and absolutely delicious and irresistible: Roasted Eggplant and Greek Yogurt Dip. It is a perfect dish to put in the center and share, accompanied by bread sticks, a good village bread or naan or chapati type bread.

First we will start roasting the aubergines... which will give it an incredible point. We can do it in the traditional oven or air fryer. In the description of the recipe we leave you all the indications for both options. Once roasted, we will only have to prepare our eggplant dip, and plate it with Greek yogurt and add all the toppings that we like the most. I, for example, opted for dried tomatoes, dried fruits and raisins. And of course, a good olive oil that can never be missing in these dishes with Mediterranean touch.

We will use harissa paste to flavor our aubergine dip, but if we don't have it we can add other spices such as cumin, paprika, chili powder.

It is a not laborious dish and very showy. We recommend you do it! The part that takes the longest is the roasted eggplant, but in reality we are not doing anything there hehehe. That you enjoy it!!
