      Hello Mario:

      Supposedly the milk and egg cream will have tempered after mixing the gelatin and nougat. What I would do would be: mix the nougat as indicated in the recipe, I would remove the glass from the machine. I would collect while cooking and after a few minutes I would check that the temperature has dropped to 37 and continue with the recipe. But do not leave it for a long time either, because as the gelatin has it, it can curdle excessively and you will not be able to mix it with the rest.

      You'll see how rich she is !!
