Muffins are those delicious cakes, muffins or sponge cake made with a simple recipe typical of all those baked goods made in the oven.
We love them because they are usually a little larger than the muffins themselves and as the main ingredient we have butter to give it that fluffiness and a different flavor.
This recipe is made with much more delicious ingredients, such as yogurt, apple and cinnamon, the combination of which will make the result a juicy cake that you will love. The glaze will be the final note so that its taste and appearance is much more exquisite.
Apple Cinnamon Glazed Muffins

Ingredients
Muffins
- 225 g of wheat flour
- 100 g of sugar
- 2 tablespoons baking powder
- 1/4 of teaspoon of bicarbonate
- 1 pinch of salt
- 1 / 2 teaspoon ground cinnamon
- 2 eggs
- 125 g plain unsweetened yogurt
- 75 g soft butter
- 1 large red apple
- A tablespoon of butter for greasing
Glazed
- 150 g icing sugar
- 20 g honey
- 40 ml whole milk
- A pinch of cinnamon
- Half a teaspoon of vanilla extract
Preparation
We heat the oven to 200 °. We start by peeling the apple and we will cut it into very small pieces. We put the apple aside for later. In our Thermomix glass we are going to pulverize the sugar. We add the 100 g of sugar and we program it during 10 seconds at speed 7.
Add the 225 g of wheat flour, the two teaspoons of baking powder, the quarter teaspoon of bicarbonate, the pinch of salt, the half teaspoon of cinnamon, the 125 g of natural yogurt, the 75 g of soft butter and the 2 eggs We program it to mix 15 seconds at speed 3,5.
We add the chopped apple that we had set aside and we reprogram 10 seconds at speed 3,5.
We prepare the molds where we are going to put our dough. We spread them with the tablespoon of butter that we have set aside and we can add the mixture. We put it in the oven for 20-25 minutes or until we see that they are baked.
In our clean Thermomix glass we are going to prepare the glaze. Add the 150 g of icing sugar, the 20 g of honey, the 40 ml of whole milk, the cinnamon and the half teaspoon of vanilla extract. We program it 20 seconds at speed 3,5. We have to have a thick glaze, if it has been very liquid we will add a little more sugar and mix.
With the baked and cooled muffins we will add the glaze giving a first layer. We let it cool down and we put another second layer on again. Next, decorate with the coarse granulated sugar and let the second layer of glaze cool.
