Ingredients

750 g of water for cooking
600 g new potatoes (small and with thin skin)
Gorda
50 g flour
50 g cornstarch
8 g Royal type baking yeast
170 g very cold water
Plentiful oil for frying
Sal Island

Preparation

We put the 750 g of water in the glass. We place the basket in its position. We place the potatoes inside the basket and add a little coarse salt. We program 40 minutes, 100º, speed 1.
We remove the basket, carefully, with the spatula. We let the potatoes cool to room temperature.
We remove the water from the glass. We rinse it. We put the flour, cornstarch, yeast and 170 g of very cold water in it. We mix by programming 5 seconds, speed 4. We put this mixture in a bowl.
We put plenty of oil in a frying pan. We chop the potatoes and pass them through that batter to then fry them in the hot oil.
When we take them out, we put them on a plate with absorbent paper.
We serve the potatoes with our favorite sauce.
