Brioche bread with oatmeal and chocolate

El brioche bread Today is a real treat. We are going to prepare it with some fresh fruit and an oatmeal muesli. You can use oatmeal and chocolate muesli or, if you prefer, the traditional oatmeal and dried fruit muesli.

Which gives spongy and it is very, very rich. Of course, kids love it.

Use a mold of plum cake for baking. If you want it to be like the one in the photo, with the muesli adhering to the surface, you just have to paint your bread with beaten egg or a little milk before sprinkling the muesli on top.

Ingredients

  • The skin of 1 lemon (only the yellow part)
  • Half a banana (35 grams)
  • A nectarine (70 grams of pulp)
  • 150 g of milk (we will put 50 grams first and then the other 100)
  • 75 g of whole cane sugar
  • 10 g fresh baker's yeast
  • 500 g flour
  • 1 egg
  • 75 butter g
  • 100 g of muesli and a little more for the surface
  • A pinch of salt
  • Milk or beaten egg to paint the surface

Preparation

  1. We put the lemon peel in the glass (only the white part). We grated it by programming 10 seconds, speed 10.

  2. We lower with the spatula what has remained on the walls of the glass.

  3. Now we put the banana, the nectarine and 50 g of milk in the glass. We program 7 seconds, speed 5. We take the mixture to a bowl and reserve it).

  4. Without washing the glass, we put in it the yeast, the sugar and the rest of the milk (100 grams). We program 1 minute, speed 3.

  5. Now we add the flour, the egg and also the mixture of fruit, milk and lemon peel that we have prepared at the beginning. We program 3 minutes, spike speed.

  6. We incorporate the butter. We program again 3 minutes, spike speed.

  7. Finally add the muesli and salt. We program 2 minutes, spike speed.

  8. We remove the dough from the glass and form a ball with it. We put it in a large bowl and cover it with a cloth. We let it rise for about two hours.

  9. After that time we shape our bread and put it in a plum cake mold. We let it rise for about an hour.

  10. We paint the surface of our bread with milk or egg and spread a little muesli on top.

  11. Bake at 180º (preheated oven) for approximately 40 minutes.
