Today we start with a recipe that we like so much because they are super practical: artichoke coke, mozzarella and Iberian ham. This recipe will save us a starter, a snack or an informal dinner with friends. Also, don't forget that cocas are a fantastic option as a recipe for use. You can search your refrigerator to see what little things you have lying around that can be put on top of a coke or a pizza and bake it and enjoy!

We are going to prepare the homemade coca dough with our thermomix, but if one day you are short on time or you simply don't feel like it, the supermarket already sells an infinite number of fresh doughs that can help you: puff pastry, brisa, pizza or empanada. Any of these four would work perfectly for you.

Tips for this recipe

  • Whenever we prepare a recipe for pizza, empanada, coca... we must make sure that the ingredients are very well drained. So, for this recipe, we will drain the mozzarella and artichokes at least 4 hours beforehand.
  • Artichokes: We have used canned artichokes because it was the ingredient we had to use (reuse recipe). But it would be great with fresh artichokes cut into super thin slices.
  • Mozzarella: We definitely opted for a ball of mozzarella cheese. Remember, perfectly drained!
  • Ham: If we bake the ham it will become excessively salty. So the trick in this recipe is to bake it only with the mozzarella and artichokes and once we have it ready and take it out of the oven, that is when we are going to place the slices of ham on top. The heat given off by the coke fresh from the oven will make the ham "sweat", but it will not cook it. It will be delicious.
