Liquid candy

Easy recipe Thermomix liquid caramel

For a long time I wondered how liquid caramel could be made with Thermomix®. It is one of the basic preparations that are used in countless recipes and, until now, it was always necessary to make it in a separate saucepan.

I have always had a bit of qualms because one day my mother burned her finger when the candy skipped but now doing it is a lot easier and safer.

And it's all thanks to Lorena Estrada, a friend of Facebook, who shared with us this wonderful recipe.

It is very simple to prepare, very fast and that only has 3 ingredients: brown sugar, water and invert sugar.

El invert sugar It is a kind of syrup that gives us a lot of play in confectionery since it serves, among other things, to give greater creaminess to ice cream, keep the soft cakes as freshly made, to help raise the masses, give greater shine, etc.

I want to dedicate this recipe to my father, who today is his birthday and as he is a sweet tooth, he is surely looking forward to bringing him some dessert with this liquid caramel.

Thanksssss I no longer have to make caramel in a saucepan to make a flan for my sister-in-law and nephews (they have celiac disease), you have some great recipes and I congratulate you.

         Elena said

I'm glad, Silvia. It is a very comfortable way to make caramel, without burning ourselves and it is also perfect. All the best.

Thank you very much for your tips and recipes. My question is: can I use this liquid caramel to put in the flan mold? Or is it to put on the flan once it has been removed from the mold?
    Thank you very much

         Elena said

Hello Maria Victoria, you can use it in both ways. It is like the candy we buy. All the best.

      Alejandra said

Hello, good morning: thank you very much for your page, it is a great help to me.
I wanted to ask you if this liquid caramel is for single use or if I can keep it in a jar and keep it liquid and, in this case, for how long or if I can keep it in the refrigerator.
Thank you very much in advance and a greeting to both of you, you are great.

         Elena said

Hello Alejandra, the caramel is perfectly preserved in a glass jar and at room temperature. It lasts like this for a couple of months. Silvia comments at the end of the recipe.

The truth is that this recipe is a treat, it is over with the saucepan stirring and the danger of burning ourselves with the caramel.

      Eva said

How long can this candy be kept in the fridge? It's not to put an expiration date on it, but to get an idea of when it can hold me.
    Thank you and salu2

         Silvia said

Eva, I at most have used it before two months. I put it in a glass jar in a cool pantry and it holds me.

      Noemi said

I would like to know if you can make candy to make lollipops with the thermomix, because I have tried it in a pan but it burns.

      Gem said

Hello girls, first of all congratulations on the blog and on the recipes. Yesterday I tried to make the cream of carrots as it was put, I was surprised by the amount of water it had, but I by habit whenever I make a recipe in the thermomix for the first time I meet all the requirements that the recipe asks for, then I give it the touch mine if I do it more times. The fact is that there were bits and pieces left and hold on, total that in the end I had to put it at a high speed to make cream and put varoma to reduce the liquid, I managed to get it out quite well but we had dinner at a thousand hehe. Has that ever happened to you? Because honestly, following all the steps should not have gone wrong, of course I think that with much less water it would come out the first time. You can tell me if you have a while.

    Greetings from Madrid.

         Silvia said

Gem, if you don't mind, put this comment on the carrot cream recipe and Elena will answer you better, who is the one who made it. The truth is that she usually makes creams somewhat liquid, perhaps with a little less water and some more potatoes are more to your liking.

      carmen said

Hello! I wanted to thank you for making it even easier to use the thermomix and get many of us out of more than one trouble. Yesterday I ran out of candy, because I asked my husband to buy and he brought me another brand, which I did not like it, so I remembered this recipe and made it. It is the same as my mother's. By the way, the sugar is very good.

         Silvia said

The truth is that it comes out delicious like that of a lifetime. I'm glad you liked it.

      mario said

Hello, the candy has come out a little liquid, it is yes, greetings

         Silvia said

Mario comes out a little more liquid than the one bought, even so you can put it a few more minutes to see if it thickens.

      Tere said

    Hello everybody!
I have just prepared the liquid caramel as it comes in the recipe ... Well after leaving it in the thermo to thicken at the end I have returned to the fire ... and if I have missed the point. I hope that when I add the mixture of flan of Vanilla everything mixes and ends up being a marvel, I'll do it in the Varoma 30 minutes. I'll tell you. Yes, I want the liquid caramel to come out like the one in the photo. For those of you who don't really use invert sugar, for cakes and ice cream it goes very, very well !! Thanks

         Silvia said

Tere, the liquid caramel in the thermomix is a little less thick than the purchased one but it comes out very rich with the flan. You will tell us how everything was for you. All the best

      mari carmen5 said

Cool!!!! It really is this candy, and also without colorings or preservatives that has nothing to do with the purchased one that for my taste is very artificial, I'm sorry I know that I am very heavy with colorings and preservatives but I really like healthy cooking and natural. Thanks for all the recipes.

Hello, could you tell me how long the invert sugar lasts? Thank you

         Mayra Fernandez Joglar said

      Hello:

It lasts looooong but with the passage of time it turns amber in color and sugar crystals form at the bottom. But it still works the same as the first day.
You don't have to keep it in the fridge. You can leave it at room temperature.

      Regards!!
