Festive salad

Today's salad is a bit special because it has fruits of the sea. We will make it with potato, carrot, green beans and that star ingredient that will make it a festive starter.

You will see it in the video but, to cook the ingredients, we have used the basket and varoma container with his tray. This allows us to cook the harder ingredients for longer. We also teach you to make mayonnaise in Thermomix. Of course, if you think it's convenient, you can use purchased mayonnaise.

Ideally, mix the mayonnaise with the rest of the ingredients when they are cold. Hope you like.

Ingredients

For the mayonnaise:

  • 300 g of sunflower oil
  • 1 egg
  • 1 egg yolk
  • The juice of half a lemon (about 20 grams)
  • 1 / 2 teaspoon salt

For the salad:

  • 700 g of water
  • 20 g white vinegar
  • 1 teaspoon of salt
  • 200 g of green beans (can be frozen) in small pieces
  • 500 g potato peeled and diced about 1 centimeter
  • 150 g carrot, peeled and diced
  • 200 g of seafood
  • 50 g black olives pitted and cut in half

Preparation

  1. We start by making the mayonnaise. We put the egg, the yolk, the lemon juice and the salt in the glass. We program 2 minutes, speed 4 and in those minutes we are pouring, little by little, the oil on the lid, so that it falls little by little into the glass.

  2. Add a few more seconds if you have not had time for all the oil to fall. We remove to a bowl and reserve in the refrigerator.

  3. We wash and dry the glass. 

  4. We put the water, vinegar and salt inside.

  5. We place the basket in the glass and, inside it, the green beans.

  6. In the varoma container we put the potatoes and carrots.

  7. We place the varoma tray on top and distribute the seafood in it. We put the cover of the varoma.

  8. We put the lid on the glass and put the varoma in position. We program 20 minutes, varoma temperature, speed 1.

  9. We carefully remove the varoma. We remove the basket with the help of the spatula and put the green beans in a large bowl. We put the seafood that we have on the varoma tray in that same bowl.

  10. We put the lid back on the glass. We place the varoma in its position, now without a tray (only with the potato and carrots), and program 10 minutes, varoma temperature, speed 1.

  11. Carefully put the potatoes and carrots in our bowl, with the rest of the ingredients. Let cool, first at room temperature and then in the refrigerator.

  12. Once cold we add the black olives and the mayonnaise. Mix well and serve.

  13. If we still do not want to serve the salad, we will keep it in the refrigerator, covered with film.
