Rice a banda with aioli

Today I bring you one of my favorite recipes rice with the Thermomix. It is a question of arroz a banda, a very simple and very cheap preparation whose origin apparently is in the fishermen of the Valencian Community.

Apparently, the fishermen, after selling all the fish they carried on their boats, made this rice to eat with the fish that they had not sold or that they had left over because they were of lower quality or interest.

For this reason, tradition says that it must be accompanied with aioli, since that way the rice was given more flavor.

Have you ever done aioli with your Thermomix? It is the easiest there is. Try this combination! Personally, I love it.

      Hello Angels, the original recipe says that they are crushed, but I did not crush them all and I left a few to decorate. At the beginning of everything, I poured a little oil into the glass and heated it for 1 minute, varoma temperature, speed 1. I opened the glass, and added the prawns and browned them for 2 minutes, varoma temperature, turn to the left.

          Is that Yuri, depending on the brand of rice, sucks more or less water. Anyway, when there are 5 minutes left to finish, we check how soupy it is and if we see that it has too much broth, we remove the beaker so that more water evaporates. Dare to do it again! Thanks for your comment.

    Good morning,
    I did it yesterday. I did not mash the prawns, I cut them in half and added them in step two (along with the oil). I also added a couple more minutes of cooking in the last step since at my house we like rice more stale.

    I used long rice from Mercadona and the white chicken fish and seafood broth (highly recommended, it's worth it and you can tell the difference)
    To say that it came out DELICIOUS is an understatement. I recommend it for those children who do not like to find "pieces" of onion, garlic, prawns, etc ... Not even the sample was left.
    It goes out for three people and I added rice.

    Hi Irene, The arroz a banda is super known here in Valencia. It is usually made with the broth used to cook rock fish and this fish is served separately in a dish, already clean and with the cooking potatoes and the all i oli. You can also put a little cuttlefish cut into very small pieces. It has been great on you. Why is the all i oli rice mixture delicious? I take the recipe with me because I have never done it with TMX. A kiss

    Another idea, this rice is better to put it once everything is fried in a container for paella and cook it on the fire. It comes out dry, it is not a rice soup. If you have time to do it like this, you will see the difference. You already know that the Valencians for rice are a bit pejigueros. Enjoy it.

      Hello Anabel, that was because it had excess broth, as you well say. In reality, you will never have a dry rice, it is a rice a little honeyed. Next time do it without a beaker so that it evaporates more and has less time. Lucky!!

    No, the bodies of the prawns means the prawn itself, without the shell (which we will have used to make the stock). You can reserve a few to add 1 minute before the time ends and thus use them to decorate the plate. Lucky!

Here it is one of the tastiest and best rice dishes, of course it is made with local fish and it is served separately (the fish) with broth. Of course, this is an adaptation of the arroz a banda to the Thermomix so that everyone, wherever they may be, can prepare it with fish that are not specifically from the Alicante area. Surely you are very knowledgeable about rice dishes, and therefore, you will know that the Thermomix will never be able to prepare a rice with the same texture and consistency as a rice made in paella.       Hello M Cinta, with 200 g of rice it will serve 4 people, it is a very filling dish. But if they are very eaters, increase the amounts by 1/3 so that you have 75g of rice per person.

    Does the recipe change anything for having the TM6 model? (Times, temperature, steps, ...).

    I would also like to know if in the Aioli recipe we can substitute sunflower oil for refined olive oil.

      Hi Mary,

      For the TM6 nothing changes, except that in points 2 and 3 you set a temperature of 120 degrees instead of Varoma as indicated in this recipe. The rest is all the same.

      Regarding the aioli, I recommend that you use those proportions of sunflower oil and olive oil that the recipe indicates. Or 50% of each. The reason is because sunflower oil has a much more neutral taste than olive oil. A 100% olive oil aioli can be made perfectly, but the flavor may be too intense. Thanks for writing to us!
