Salmon salad with mango and cucumber

Ingredients

  • 1 cup cucumber
  • 1 cup mango
  • 100 g of smoked salmon in small cubes
  • Half a cup of cherry tomato
  • Half a cup of red onion
  • Olive oil
  • Vinegar or lemon juice
  • Sal Island
  • 1 tablespoon sweet or salty soy
  • Some basil leaves
  • A few spinach leaves for salad

Preparation

  1. Clean and peel the cucumber and cut it into cubes.

  2. Peel the mango and separate it from the main pip. We cut it into strips and make small cubes.

  3. Peel and wash the onion and cut it into small pieces.

  4. Wash and cut each of the cherry tomatoes into 4 portions to fill half a cup.

  5. Chop the spinach leaves for salad into small pieces.

  6. Take all the ingredients and add them to a large salad bowl. We mix them well.

  7. It only remains to season with a little salt and ground black pepper (optional). We will also dress with olive oil, vinegar or, failing that, with lemon juice. Serve cold and decorate with a few leaves of fresh basil.
