Many times we have something in the fridge about to expire and we think with what recipe we can use it. This was the case with this delicious flan.

I had two tubs of mascarpone cheese, who had bought with the intention of making a super tiramisu but time passed and the date of having to consume it was approaching. I looked for a recipe from the trunk of memories and found this recipe that we liked so much that we have already made it several times.

It is a very soft flan with a slight touch of cheese mousse. We also loved it because it is easy to prepare and in about 10 minutes you have a dessert ready to set in the fridge.

With these ingredients, I got a large flan and 4 individual ones.

          Bea, I had a "panic" for whipping the cream, I had a whisk with rods, and I had a vice ... but it got spoiled years ago, and I never whipped cream again. And I tell you that it is easier than it seems to us. You have to take into account just a few things:
          - The glass must be cold and dry, that is, if you have cooked something with heat before, you must cool it. o Wait.
          - The cream also has to be cold, and at least 35% fat and before adding it, shake it so that it comes out liquid and not lumpy.
          - You do not put time, and speed 3 1/2, you are lifting the cup if it skips cream it is not yet, if it does not skip it is, so we stop the machine. Also if you pay close attention and have a good ear, you will see how it sounds different.
          If despite everything (which has happened to me) it cuts you, don't throw it away, you can make butter with it.

      A tub of mascarpone cheese
      150 cc of milk
      200 cc of cream
      90 grams of sugar
      1/2 envelope of neutral gelatin (powder) or 2 sheets of gelatin
      I continue the recipe as if it were with the amounts indicated in the recipe.
      I have already tried it several times and it comes out great.

      The vast majority of recipes that we publish are for the TM-31 model, because it is the current one and it is the one we have, but they can still be adapted as they say. Whenever we say: "left turn, spoon speed" you must put the throttle and speed 1. When we say: "we chop at speed 5" you must put speed 31/2.
      About the recipes to store them, I would open a folder on your computer and put them there.
