Hen/Stag meatballs is dinner favorite of my daughters. They always eat some "pelotilla", as they call them, once they are fried and while the sauce is being made.

I soil them make with half beef and half pork, but sometimes I only make them from beef. For us, the best accompaniment is with french fries, although you can also go very well with a delicious and creamy mashed potatoes.

This is the typical recipe that can be do in advance and leave frozen. So you will have them ready and, at any time, they can be used to prepare a lunch or dinner for the whole family.

They are also ideal for eat at the office because they are very easy to transport.

Hello Elena, they look very good, but while you finish cooking the meatballs in the basket, do you have the sauce reserved separately? Thanks!

    1.    Elena said

Hi Monica, I put the meatballs with the sauce so that they take on the flavor and finish making everything, the sauce and the meatballs.

      1.    Lorraine said

I make them very similar, but instead of frying the meatloaf, I cook them with varoma while the sauce is steeping…. When they are done I put them in a source I pour the sauce on top and ready to eat. So I make less mess since I don't have to fry them and they are healthier .. I hope you like them. greetings and thanks for this blog I love it….

        1.    Elena said

Thank you very much, Lorena! I will try to do them like this. They are healthier. Greetings and I'm glad you like our blog.

          1.    Cristina said

Good bives to all. I have meatballs already formed. One question: do you have time to make the varoma in 18 minutes divided in two halves? It is 9 minutes of the sauce plus another 9 of the broth. Thanks.

          2.    Cristina said

It seems to me that I already understand. They are only put on when the sauce is made, in the last 15 min.
Anyway, I have put it in the basket instead of the varoma.

          3.    Elena said

That's Cristina, worse for your next comment I see that you have been perfect. I'm glad!.

  2.   Maria Torre said

    Hello Elena.

As you will see, I am a follower of your page and I enter every day. You are a good reference for my daily menus.

Yesterday I made the meatballs following this recipe ... and well it was fast, clean and with an extraordinary result ... They all liked it very much and have asked me to repeat them next week.

I have a question that has nothing to do with this recipe and it is about "hard" eggs. How can I make them in varoma?

    Many Thanks

    1.    Silvia said

Maria, I make them inside the glass placed in the basket. You have to cook them with 500ml of water, varoma temperature, speed 1, about 15 minutes, so that they are firm hard-boiled eggs, if you want them less done you can put them for about 12 or 13 minutes.
I have also made them in the varoma with some vegetables and as a precaution they should be wrapped in transparent film in case they burst a little, so that they do not stain the rest of the food. Here I usually put them about 20 minutes.

    2.    Elena said

María, as Silvia tells you, they come out perfect. Another way is that when you make a recipe in the glass that takes about 15 minutes at least (for example, the ratatouille) you place them in the varoma container wrapped in plastic wrap. You can also take advantage of the varoma container to cook potatoes, etc.

  3.   Eva said

Elena, congratulations on this recipe, they are… very good. One of my husband's favorite foods is meatballs, and I wanted him to try them, but today when he ate them I was at school picking up my daughter and she called me to tell me they were "delicious." Thank you very much and a kiss.

    1.    Elena said

Thank you very much, Eva. A kiss.

  4.   Pebble Gem said

Hello Elena! I always take you as a good reference for meals and I just made the meatloaf ... it looks good, I'll freeze it for another time, so I make a frozen pantry ... hehe, between this ..., the nuggets, the croquettes ... etc etc .
The fact is that I have a couple of doubts, when frying ... impossible not to put something on top ... the machine looks like a spaceship! I put the basket ... the hard way ... so I didn't make the gotélé in the kitchen.
And when the laurel is thrown, I put vel to the left believing that this way it would not destroy me? but no…. I've got it done chunks, although that's the least of it. They look great!
    Thank you very very much.

    Hi girls!
I have a doubt, the meatballs after frying you put them in the basket and do not mix them with the sauce, or do you put them in the sauce and put 15 min tª varoma and vel 4 but without turning to the left? but the meatballs are minced?

    1.    Elena said

Hello Elena, they are put in the basket so that they do not break with the blades. All the best.

  9.   Elena said

Okay! Thank you very much, keep it up you are great.

Hello Elena. The chopped egg, I imagine it has to be hard. Can you pour it raw, too? Thanks. All the best.
I love the recipes you share.

    1.    Elena said

Hi Ana, whoops! I made a mistake when writing the recipe. I don't know what he was thinking! It is a raw egg that you have to add, but I don't know why I added minced. Thank you very much for asking because that is how I have realized it and I have already rectified it. All the best.

    1.    Elena said

Hello Azucena, if they have been hard it is because they have been baked too much. Next time, bake them a few minutes less. We always put approximate oven times because each oven is different. Greetings and I hope you like the sauce.

Today I made the meatballs with a variant: instead of using the stock cube, in the initial stir-fry I added 2 carrots. They were to die for !!! (I try to avoid the stock cube as much as possible).
Thank you very much for all the recipes.

I'm very glad you liked them, Almudena !. Next time I'll make them with the carrots. All the best.

Could you explain to me what it means ... when you talk about programming 9 minutes, do you mean to fry 9 minutes?
What is varoma temperature and when they talk about speed 3, 5 without a beaker, does it mean to beat them in a blender? .. excuse me but I am Colombian and here those terms are few known .. I thank you for clearing this doubt that I loved the recipe but I do not understand well this language .. thank you ..

Hello Guillermo, these expressions are to use the Thermomix kitchen robot. Do you have him? All the best.

<Hello, a question, in the first stir-fry that is without a cup, can the basket be put in its place? I am making them right now (they are delicious! And that's because I only liked the chicken ones, but they are of death!!!) and I put it on this time...the first time I got half a kitchen splattered with onion...heh heh..is anything going to change?.A kiss and thanks for your blog, I'm not much of a cook And thanks to you, you motivate me to use the robot and get the most out of it. I hope it stays like this for a long time!

  65.   ANA said

Hello. I have made your recipe and we all loved it. The only but is that little sauce has come out for our taste. In addition, when putting them in the basket for 15 minutes, the sauce does not circulate, but the lumpiest part remains stuck with the meatballs and the most liquid part, is the one that rotates with the blades. Is this normal? For more sauce to come out, do I double all the ingredients? Do I crush the sauce before putting the meatballs in the basket?
    Thank you very much.

    1.    Silvia said

Ana, I like it with a lot of sauce and I increase the amounts a little, I do not double them completely so that it does not come out and I add better cornstarch because I like it thick. Try to see how.

  66.   Ester said

Hello, Congratulations on your Blog, I have been practicing your recipes for a long time and they are always a success but the meatloaf …… it was not a good day 🙁
I buy them in my butcher shop, to see if I understand well…. Initial 9 minutes + 9 minutes with all the ingredients, during these minutes I will dedicate myself to frying the meatloaf and then I put them in the basket and 15 more minutes for the sauce?

Yesterday I only made the 9 + 9 and the sauce was very bad and white and very liquid.

    1.    Irene said

Hi Ester, it's 9 minutes + 9 minutes + 15 minutes. Maybe that's why the sauce was not as thick as it should be, keep in mind that you took away the last 15 minutes ... try it next time, you'll see how much better it is. In any case, if the sauce is still very liquid, you can add a teaspoon of cornstarch and program 2 more minutes at speed 4.

  67.   montse said

Today I made the meatloaf and when I put them in the basket I also put some mushrooms that were done in the 15 minutes just like the meatloaf with the sauce and it was all delicious !!

  68.   Tue said

Hello !!, I just bought the Thermomix, and reading your meatloaf recipes, there is one thing that I don't quite understand: what does 9 minutes + 9 minutes mean? Wouldn't it be 18 in a row? Or is it that we have to do something different between the two? , Greetings and thank you

    1.    Mayra Fernandez Joglar said

      Hello Sea,

the first 9 minutes are to fry the onion. Then you add the white wine, the water, the tomato, the stock cube, the bay leaf and a teaspoon of flour and you program another 9 minutes.

  69.   ROSI said

Hello Silvia, I already made the meatloaf several times, the truth is that they are delicious, and since my son loves this sauce, I wanted to try to make it with some golden sirloins in the pan and wrapped in film in the varoma. Will it be enough liquid to cook with the varoma? I tried these sirloins with an orange sauce that was very good, but at home I like this meatball better. Thanks for all the wonderful recipes that you post, they are of great help. Merry Christmas

I have prepared these meatballs today, but the truth is that they have not turned out well, I have put the meatballs in the basket as the recipe says, but when they finish they come out raw they are not made inside and in part it is logical since the sauce does not reach them .

    1.    Irene Arcas said

      Hello Momavafer,

This recipe is like that, that's why I like to sauté them first in a pan with a little oil so that they brown and then they are done in the basket. They do not really stay raw, but they are steamed and that is why they are softer. Anyway, you can always add more minutes to it.

I leave you this recipe, which for me is my favorite meatball: http://www.thermorecetas.com/2011/11/11/receta-thermomix-albondigas-de-tomates-secos-y-almendras-en-salsa-espanola/

Hi Sole, you do have to leave the sauce in the glass. With the heat it will boil and will cook the meatballs that we have in the basket.
They are delicious, I hope you like them! You will tell us.
Thank you for writing us and for preparing our recipes.

I'm going to make the meatball recipe today…. Are they tender? In my house it is the most important thing that they come out soft. I have read the comments and I liked them a lot.

  88.   Erika said

Good morning, I made the recipe the other day and they are delicious. I would like to double the amount, with the sauce there is no problem but the meatballs would not fit in the basket. My question is if they will be just as delicious by putting them in the male container. Thanks greetings

    1.    Mayra Fernandez Joglar said

      Hi Erika:
You can put them in the varoma without any problem.
I recommend that when serving you mix the meatballs with the sauce. And if you can bring them all to a boil together, all the better. This will ensure that the meatballs are impregnated with the flavor of the sauce.
