Before the purists get on me I have to say that, actually, it's not a jam because these types of preparations always have sugar that, in addition to sweetening, gives them a special texture.

And you know that chia seeds in contact with a liquid they form a mucilage. This viscous gel also helps the jam has the right texture so you can spread it on toast.

In the first part, the one that is cooked at 95º, you will not need so much the basket. But in the second, in which it is cooked at varoma temperature, it is essential if you do not want your kitchen to look like a crime scene.

      If you have read the entire recipe, you will have already seen that I have commented that "... actually, it is not a jam because these types of preparations always contain sugar which, in addition to sweetening, gives them a special texture." Also notice that it does not serve to preserve vacuum precisely because of the lack of a preservative.
      The good thing about this recipe is that, even if it is a compote, it has an easy texture to spread on toast. 😉
