Zamburiñas and mango skewers in airfryer

These scallops and mango skewers in airfryer are a original and quick appetizer to make that you can use on special occasions.

And throughout the year there are several times when we want to show off more in the kitchen and we always look for successful recipes that are simple, attractive and, above all, that do not require anything to do.

The best of all is that this appetizer looks very nice served like this in individual cups. And it has less than 150 kcal…You can't do anything more!

The first thing you have to know is that This recipe is made quickly, so I do not advise you to make it in advance so that the sesame does not lose its crunchy texture.

You can use the scallops fresh or frozen. I have used frozen ones and they have given me very good results.

Of course, I had to defrost them before but they are very small pieces and you will have them ready in a short time.

This is an appetizer that tends to be sweet, so don't forget to add a little salt to the coconut cream and, above all, season the scallops well so that everything is tastier.

It can use both lime and tangerine to make this recipe. I have tried it with both and with mandarin it is sweeter.

So if you want your dish to have more contrasting notes, I recommend that you use lime, which goes wonderfully with the rest of the ingredients.

Point hot spicy It is also very correct but I understand that during Christmas we should not err on the side of excess and too much spice can be harmful.

Even so, I recommend that you add a bit of chili so that everything is more balanced. It is also a good idea to use a spicy oil to season the cream.

La coconut milk It has to be from a can because, in reality, what we are going to use is the layer of cream that forms on top. And that is not achieved in carton coconut milk.

You can use directly coconut cream for cooking but this is not as easy to find as canned coconut milk.

By the way, don't throw away the rest of the coconut water you have left as you can use it to make a pumpkin cream.

To make this recipe you can use both zamburiñas like volandeiras. However, I don't recommend the scallops because they are already too big for this type of appetizer.

How to serve this appetizer?

To make this recipe I have used very small skewers...almost, almost mini size. so i had to serve 4 per person.

What I did to present them was serve them on individual trays with a small glass of cream, one of the brooches on top as in the photo and the rest on the tray.

You can also serve the glasses on one side and all the skewers on a central tray, although for me it is more comfortable the other way.
