Couscous salad

We are going to prepare a very original vegetable salad. The protagonist is the cauliflower which, when crushed, looks a lot like couscous.

Take other vegetables: carrot, celery and zucchini. But you can make this salad more complete by adding a few pieces of cooked ham or a can of canned tuna.

Cauliflower Couscous Salad

Ingredients

  • 50 g olive oil
  • 20 g lemon juice
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon turmeric powder
  • A pinch of salt
  • A pinch of ground pepper
  • 500 g cauliflower, raw and in florets
  • 70 g carrot, peeled and in pieces
  • 30 g celery, cut into pieces
  • 80 g zucchini with skin and in pieces
  • 1 or 2 peeled tomatoes
  • A few fresh mint leaves (optional)

Preparation

  1. We put the olive oil, the lemon juice, the curry, the turmeric, the salt and the pepper in the glass. We program 10 seconds, speed 4.

  2. Without removing the mixture from the glass, add the cauliflower. We program 5 seconds, speed 6. We take out and reserve a large bowl.

  3. We now put the carrot, celery and zucchini in the glass. We program 5 seconds, speed 5.

  4. We put these ingredients in the bowl where we have the cauliflower.

  5. Peel the tomatoes and chop them with a board and knife or, if you want, in the glass itself, programming 4 seconds, speed 4.

  6. We incorporate the tomatoes in the bowl where we have the rest of the ingredients.

  7. If we want, we add the mint leaves.

  8. We mix well and we have our salad ready to take to the table.
