Calatrava bread with the aroma of orange and cinnamon

Preparation

1. A few hours before we go to prepare the sweet we put the milk in a saucepan to boil with the orange peel (be careful, only with the orange part, which if we put the white part then it will become bitter). We can also cook it in Thermomix during 6-8 minutes at varoma temperature, spoon speed. We reserve (leaving the skin in the milk).

2. We put water in a deep source in which our mold fits (we do not fill it because if not, when we put the mold, the water will overflow).

3. We put that source with water in the oven and we turn the latter at 180º.

4. In a saucepan we prepare the caramel. We put in it the sugar and the spoonful of lemon. We let it melt over low heat, until it turns a golden color.

5. We put the already flavored milk in the glass of our Thermomix (removing the orange peel and the cinnamon stick), the sugar and the eggs. We program 10 seconds, speed 3.

6. We put the caramel in our mold (mine is rectangular, made of plum-cake).

7. And we continue with the preparation of the flan… Now we put the sponge cake into pieces (we can cut it lightly with our hands) and, if we want, a little grated orange peel. We mix again for 10 seconds at speed 3. We pour this mixture into our mold that already has the caramel.

8. We cover the rectangular mold with aluminum foil and put it in the oven, inside the mold that we already have inside with hot water. Thus we will cook the calatrava bread, in a bain-marie.

9. It will need to be in the oven for about 45 minutes or even an hour. Go looking with a toothpick. When it is set it will be ready.

10. We take it out of the oven and let it cool. We unmold before serving.
