Ingredients
Cake
- 4 eggs1
- 100 g of wheat flour
- 100 g of sugar
- 30 g unsweetened cocoa powder
- 2 teaspoons of vanilla extract
- Peel of an orange
- 1 pinch of salt
Truffle cream
- 500 ml of cold whipping cream
- 120 g of sugar
- 2 tablespoons of cocoa powder
- 1 teaspoon vanilla extract
Syrup to soak the cake
- 40 ml water
- 30 ml of liquor (rum or sweet wine
- 2 tablespoons sugar
Decor
- 100 ml cream to assemble
- 100 g of dark chocolate for pastries
- 3-4 thin slices of orange
- yellow flowers
- Mint leaves
Preparation
In our Thermomix glass we place the butterfly and add the 4 eggs, the 100 g of sugar, 2 teaspoons of vanilla extract and the orange zest. We mix it by programming 6 minutes at 37 ° at speed 4. At the end of the time we re-program 6 minutes at speed 4. While we heat the oven to 180 °.
Add the 100 g of wheat flour, the pinch of salt and the 30 g of cocoa powder. We mix during 4 seconds at speed 3. We will observe that it has not been mixed well, but we cannot program it longer because the volume of the dough is lowered. In my case I have taken it out in a bowl and I have finished mixing it by hand, with softness and enveloping movements.
We put it in a pan that can go into the oven, with a diameter of 18 cm and that can be easily removed from the mold. In my case, I have placed a baking paper inside and at the base of the pan to be able to get the baked cake much better when it is finished. We bake it between 20 and 25 minutes or until we check that it has been cooked, inserting a needle and observing that it comes out clean.
In our clean glass we place the butterfly and add the 500 ml of whipping cream together with the 120 g of sugar. We schedule it during 50 seconds at speed 3,5. The whipping time for the cream is indicative, since this time can be programmed and not finish whipping completely. If so, we reprogram it from 5 to 5 seconds until we see that it is mounted.
We take the cream into a bowl, add the teaspoon of vanilla extract and the two tablespoons of cocoa. We mix it by hand and reserve in the refrigerator.
We prepare the syrup: In a bowl we add the 40 ml of water, the 30 ml of liquor and the two tablespoons of sugar. We mix it well.
With the baked cake, we unmold it and let it cool. Then we will divide it into two parts. In the first layer we add the syrup, cover with a layer of truffle and cover with the other sponge top. We put the syrup again in this part of the cake.
With the truffle that we have left over, we put a few tablespoons in a pastry bag with a wide and curly nozzle and set aside. With the rest of the truffle we decorate the sides of the cake.
In our clean glass we add the 100 g of dark chocolate and the 100 ml of whipping cream. We are going to melt it by programming during 2 minutes at 90 ° at speed 1,5.
We will cover the cake with the chocolate and the rest will be put into a bottle-bottle to decorate the sides of the cake with droplets. With the pastry bag we decorate the surface with mounds of truffled cream.
Finally we finish decorating with the folded orange slices, the flowers and the mint leaves. We put in the refrigerator about an hour so that the whole set solidifies well. Take advantage!
