Flemish-style eggs with ham and chorizo

Preparation

1. We start by cooking the peas. In a small saucepan, add the peas, cover them with water and add a small touch of salt. we leave it cook about 12-15 minutes. When they are cooked, drain them and set them aside.

2. Peel and wash the potatoes. Heat the oil in a large frying pan. Cut the potatoes into cubes and fry them together with the two garlic cloves, peeled and cut in half. When they are golden, take them out and add another pinch of salt. We separate.

3. In a frying pan, add a splash of oil and heat it. Peel and cut the onion julienne or into very small pieces. We put it in the hot oil and let it begin to fry.

4. Cut the chorizo ​​and ham into small cubes. Add it to the onion and let it all fry together until it turns golden brown.

5. Add the peas and wrap everything to cook for a couple of minutes. Add the potatoes and give a couple of turns while mixing and cook another minute.

6. We divide and distribute the vegetables and the sausage among four individual clay pots. Cover with a couple of tablespoons of fried tomato and add two eggs. We put a little salt on top.

7. We put the pots in the 200 ° oven with the grill on and let the eggs cook. We will leave it the necessary time until we see that they are curdled. Decorate with parsley and serve hot.
