This dish has three small recipes in one, but they are a wonderful combination. The purée is a wonder, since its purple tone will indicate a different complement. If you do not get this type of potato you can do it with normal potato.
Salmon has a quick process, since it only has to be fried or grilled in a pan. The puree takes a much slower process, since it will have to be cooked in the glass, but it will be totally easy to do.
Finally we will make the avocado mayonnaise. We will pour it into the glass and with two small twists we will make this cream with a little garlic flavor and that will be ideal as a companion for this dish.
Grilled salmon with purple potato purée and avocado mayonnaise
For a second course you won't have to worry about anything else. This grilled salmon has a delicious accompaniment of purple mashed potatoes and an avocado sauce.

Ingredients
Avocado mayonnaise
- 1 large avocado
- 1 garlic clove
- The juice of half a lemon

- 270 ml whole milk

Preparation
Peel and wash the potatoes. We cut them into small pieces and put them in the glass with the butterfly. Add the 270 ml of whole milk and program it for 20 minutes at 100 ° at speed 1.
Add the 30 g of soft butter, salt to taste and program again for 30 seconds at speed 4. Remove the puree from the glass and set aside.
In a non-stick frying pan, pour the oil. When it begins to be hot, add the salmon slices. Let them begin to fry and brown on both sides. Meanwhile we can make the avocado mayonnaise.
Cut the avocado in half. With a spoon we take out all the pulp of the avocado and remove the bone. In our glass we put the avocado, the juice of half a lemon and the clove of garlic and program it for 2 minutes at speed 4.
We raise the lid and lower down what has risen through the glass. Add salt and two tablespoons of mayonnaise. We will return to schedule 10 seconds at speed 4.
Serve the salmon on a plate and garnish with dill. In a bowl we serve the avocado mayonnaise. With a spoon to make ice cream balls we serve a portion of mashed potatoes.
