Lemon cake

The mass of this lemon cake We are going to prepare it without dairy products: without milk, without butter and without yogurt. We will do it with olive oil.

When they have tried it at home they have told me that it tastes like Shortbread of the grandmother and that means that it is very rich. The donut recipe can be found at our first book like Yela donuts.

On the surface, to make it more “fun”, I have put these cereals of chocolate. If the cake is going to be eaten by people who cannot eat dairy products, you will have to replace them with specific cereals or simply not put anything on the dough.

Ingredients

  • 100 g of sugar
  • 2 lemons (the skin and the juice)
  • 140 g of extra virgin olive oil
  • 100 g of water
  • 3 eggs
  • 300 g flour
  • 1 envelope of yeast type Royal (16 g)
  • Chocolate cereals for the surface (you can substitute others or not put anything)

Preparation

  1. We put the sugar and the skin of the lemon (only the yellow part) in the glass. We program 8 seconds, speed 10.

  2. We fit the butterfly on the blades. We lower with the spatula what has remained on the walls of the glass and incorporate the 3 eggs. We program 3 minutes, speed 3.5.

  3. Add the oil, water and lemon juice. We program 15 seconds, speed 3.

  4. Now add the flour and yeast. We program 20 seconds, speed 3.5.

  5. Put the dough in a mold of 22 centimeters in diameter, previously greased with a little oil and flour.

  6. We spread some chocolate cereals on the surface.

  7. Bake at 175º for approximately 45 minutes. 

Notes

Cereals are totally optional. If you have dairy intolerance you will have to omit them or use specific cereals.
