I hope you like the rustic cake from today. It has blueberry jam inside but, of course, you can substitute it for your favorite. The good thing is that we will not have to open the cake once it is made to fill it, but we will put that filling before baking. Then I'll explain everything to you.

It is a picnic delicious or a dessert exquisite if we accompany it, for example, with some Custard light or lemon curd.

I have not decorated the surface with anything but do not hesitate to do it if you feel like it. A little icing sugar once baked and cold may be enough.

Ingredients

  • 50 g almonds
  • The skin of 1 organic lemon
  • 200 g of wheat flour
  • 150 g butter at room temperature, diced
  • 100 g brown sugar
  • 2 eggs
  • 1 egg yolk
  • 10 g of yeast type Royal
  • 2 or 3 tablespoons blueberry jam

Preparation

  1. We put the almonds and the lemon skin (only the yellow part) in the glass. We grate on progressive speed 6-10.

  2. We add the flour, sugar, yeast and salt. We put the beaker and program 5 seconds, speed 3 1/2.

  3. We add the eggs, the yolk and the butter. We program 15 seconds, speed 4. We make sure everything is well integrated.

  4. You will see that it is a thick and consistent dough. Just as it has to be.

  5. With a spoon we put half of the dough in the base of a mold of 18 cm in diameter. On the surface we distribute the jam, with a spoon. We cover that layer of jam with the rest of the dough.

  6. Do not worry if when distributing the dough there is a little jam on the surface. Nothing happens.

  7. Bake at 180 (preheated oven) for 35-40 minutes (approximate time), until you see that it is well baked.
