Pan omelette

Have you already prepared tortillas in Thermomix? Today's is different because it has bread from the previous day. Also a clove of garlic, parsley and a little milk.

It is prepared in the varoma, specifically on the tray, while we cook the ratatouille of eggplant in the glass.

We will make the rice in a normal saucepan, at the same time as the previous preparations. In case you prefer to cook it in the glass, I will indicate how in the Notes section.

We will cook the omelette in the varoma while the ratatouille is made in the glass.

Ingredients

For the omelette:

  • One garlic clove
  • Fresh parsley
  • 60 g of bread from the day before
  • 6 eggs
  • 50g milk
  • Sal Island

For the ratatouille:

  • 80 g of onion in pieces
  • 30 g olive oil
  • 400 g of aubergine in approximately 1 cm cubes
  • 200 g tomato passata or crushed tomato
  • 70 g pitted green olives
  • 30 g capers in oil (drained)
  • Sal Island
  • Black pepper

For the rice:

  • Water (1250 g if we do it in Thermomix)
  • 300g basmati rice

Preparation

  1. To prepare the omelette we put the garlic clove, the parsley and the bread in the glass. We program 15 seconds, speed 7.

  2. We add the eggs, milk and salt. We mix by programming 10 seconds, speed 4.

  3. We put moistened parchment paper on the varoma tray, without covering the holes at the top. 

  4. We distribute the mixture in the tray, on the paper. We place the cover of the varoma and reserve it.

  5. We wash and dry the glass because we are going to prepare the ratatouille.

    We put the onion in the glass. We program 5 seconds, speed 5. We lower with the spatula what has remained on the walls of the glass.

  6. Add the olive oil, the aubergine, the tomato passata, the water, the olives, the capers, a little salt and pepper. 

  7. We cover the glass and place the varoma in its position. We program 17 minutes, varoma temperature, left turn, speed 1.

  8. We can take advantage of those minutes to cook the rice in a saucepan with boiling water (another option is to cook it previously in Thermomix, I tell you how in the Notes section).

  9. We drain the rice and put it in a bowl. We can serve the ratatouille from the same source. We also serve the tortilla.

Notes

We can cook the rice in Thermomix, before starting the recipe. We would have to put 1250 g of water and make it boil by programming 10 minutes, 100º, speed 2. Next we add the rice and program 16 minutes, 100º, left turn, speed 1.
