Coconut cake

This coconut cake is delicious and is ideal for a delicious snack or to take to work and surprise colleagues at coffee time.

The original recipe is modified because the first time I made the recipe it seemed to me that it was very lacking in flavor especially considering that I love coconut. The following times I have added the double the amount of coconut And so I did like it.

It is a cake that you can use both for breakfast or to prepare a tropical snack with small pieces of this sponge cake and natural smoothies.

    I don't get the cake and it looks very good. It has been a disaster. I have doubled the ingredients because there are many of us at home. And since I don't have a round mold, I put a rectangular mold on it. I've put it on the middle rack. At that temperature I have been raw inside. And if I put it on for a longer time, it burns on top. My oven is electric. If I put it at a lower temperature than 170 it goes down after raising it and it stays crushed. At 190 it burns me. I do not know what to do.

    Does the temperature change if I put double the mass? I imagine it can't be fixed anymore. But I have done two to do if I learned and it has also been down on me. Toasted on the top and raw on the inside.

    What do you advise me? Thanks.
