These sausages can be made with minced meat where you can season them with curry, cognac and black pepper. You can also fill them with various ingredients. In this recipe we have used olives, raisins and piquillo peppers.

Another note to contribute is that if you want to substitute some of the ingredients there will be no problem. Turkey meat can be substituted for chicken perfectly. Ingredients
Turkey luncheon
- 500 g of ground turkey meat
- 75 g of peeled pistachios
- 1 teaspoon salt
- XNUMX/XNUMX teaspoon curry powder
- A pinch of ground black pepper
- A small handful of raisins
Pork luncheon
- 500 g of pork
- 1 teaspoon salt
- A pinch of black pepper
- 2 tablespoons cognac liqueur
- 8-10 pitted and stuffed olives
- A tablespoon of piquillo peppers in strips
Preparation
In our Thermomix glass we are going to crush the pistachios. We introduce and program them during 40 seconds at speed 4, but we are gradually increasing to the speed 8 until you see that they have been ground. We separate the pistachios on a deep plate.
We put the 500 g of minced pork, the tablespoon of salt, the pinch of pepper and the two tablespoons of brandy in the glass. We mix it all up by programming during 40 seconds at speed 4.
We prepare plastic wrap on a table. We make about 3 cuts of the same size so that they cover the rectangle of minced meat that we are going to place. We put half of the meat on top and form a rectangle. We place about 4 or 5 olives and some strips of piquillo pepper.
We cover with the other half of minced meat and spread it, making the same shape as the bottom. We return to add 4 or 5 olives and a few strips of piquillo pepper. With the plastic film we are going to lift one of the sides to roll the dough and form a cylinder. We squeeze and press until we are doing the roll. We press on the sides and tie the ends by twisting the plastic.
In our clean glass we add the 500 g of ground turkey meat, the tablespoon of salt, the pinch of ground black pepper and the teaspoon of curry. We schedule it during 20 seconds at speed 4.
We uncover, add the small handful of raisins and re-program during 10 seconds at speed 4. We remove the meat from the glass and we give it a cylindrical shape with our hands.
We place it on the plate of chopped pistachios and coat the piece well. We prepare the plastic film as in the other cold cuts and we arrange what we have prepared.
We wrap it with the plastic and we roll it up. We tighten and adjust by pressing in the center and on the sides.
We clean our Thermomix glass and fill it with water. We put the lid on and prepare our varoma system. On top of the tray we introduce the two pieces of cold meat and cover with its lid. We schedule during 30 minutes at varoma temperature at speed 0,5.
After time we uncover and turn the pieces around. We cover again and program others 30 minutes at varoma temperature at speed 0,5.
After time we take out the pieces and let them cool. We remove the plastic that surrounds them and we can serve in portions.
It seems to me a good alternative to conventional sausages, I have a strict diet and I cannot eat sausages, I will prepare these to be able to enjoy a sandwich with peace of mind. Thank you
