To this cream of pumpkin We are not going to put potato, hence it is so light. It will have a little carrot and also onion. Then, once on the plate, we are going to add a few pieces of apple to get that crunchy touch that looks so good in vegetable creams.

Thus we will flee from the traditional croutons and bring to the table a very light cream that we can serve as incoming (if we put it in small glasses) or as a first course.

A very light cream made with pumpkin and a little carrot. The apple will give it a fresh and crunchy touch.

Ingredients

  • 60 g onion
  • 20 g of extra virgin olive oil (and a little more if we want to drizzle raw in each dish)
  • 780 g of pumpkin (weight already peeled)
  • 195 g carrot
  • 775 g of water
  • 1 hoja de laurel
  • Sal Island
  • 1 grand smith apple (or another variety that we like)
  • A splash of lemon juice

Preparation

  1. Peel and chop the pumpkin and carrots until we obtain the weight indicated in the ingredients.

  2. Peel and quarter the onion.

  3. We put the onion in the glass and program 2 seconds, speed 6 1/2.

  4. We add the carrot, the pumpkin and the oil. We program 5 minutes, 100º, speed 1.

  5. Now we add the water and the bay leaf. We program 20 minutes, 100º, left turn, speed 1.

  6. After the scheduled time, remove the bay leaf and add the salt. We shred programming 15 seconds, speed 7.

  7. Peel and chop the apple. We sprinkle these pieces with lemon juice to prevent them from oxidizing.

  8. We serve our pumpkin cream with one or two tablespoons of apple on the surface and, without wanting to, with a little raw extra virgin olive oil.
