Today's cake you will love. To prepare it we do not even need a rolling pin because we will put the dough crumbled in the mold. And our kitchen robot is in charge of shredding it. You will see everything in the video that you will find at the end of the recipe.

Inside it has a delicious Lemon cream that we will also do in Thermomix. It is a simple, original and very, very rich cake, perfect for any occasion and even for celebrations.

A tart made with crumbs of dough and a creamy lemon-flavored filling.

Ingredients

For the lemon cream:

  • 1/2 lemon (the skin and the juice)
  • 60 g of sugar
  • 300g milk
  • 3 yolks
  • 30 g cornstarch

For the mass:

  • 100 g butter at room temperature, cut into pieces
  • 260 g flour
  • 60 g of peeled almonds
  • 100 g of sugar
  • 1 egg
  • 1 sachet of backing powder

And for the surface:

  • Powdered sugar

Preparation

  1. To prepare the cream we put the sugar and the lemon peel in the glass (only the yellow part). We program 15 seconds, speed 10. We lower with the spatula what has remained on the walls of the glass.

  2. We add the milk, the egg yolks and the cornstarch. We also add 20 g of lemon juice. We program 6 minutes, varoma temperature, speed 4.

  3. We put the cream in a bowl, covering the surface with transparent film. We booked.

  4. We wash and dry the glass.

  5. We put in the glass 20 g of almonds. We program 3 seconds, speed 6. We reserve them in a small bowl or in a glass.

  6. Without having to wash the glass, add the sugar and the remaining 40 g of almonds.

  7. We program 15 seconds, speed 10. We lower with the spatula what has remained on the walls of the glass.

  8. Add the flour, butter, egg and yeast. We program 10 seconds, speed 5.

    We'll get dough crumbs and that's how it has to be.

  9. We put 2/3 of the dough, in crumbs, in a 24-centimeter mold that we will have previously greased.

  10. We now put the cream in the center and distribute it with the help of the spatula.

  11. We cover the cream with the rest of the dough, again crumbled.

  12. We put the almonds that we have chopped at the beginning on the dough crumbs, distributing them on the surface of the cake.

  13. We bake at 180º for approximately 20 or 25 minutes, until we see that it is golden.

  14. Once the cake is cold, we unmold it and sprinkle icing sugar on its surface.

Notes

With this filling, a delicious cake is left but if you want to complicate it even less, you can prepare just the dough and substitute the lemon cream for your favorite jam.

    In step. 8 I need to put the butter because when I did it I had a dry dough and I realized that I still need to put the butter.
