Let's go there with a simple recipe: apple and hazelnut cake. The apple slices make it a juicy sponge cake and the fruit takes on a leading role. Hazelnuts give it a characteristic flavor and give it personality.

A juicy cake thanks to the apple that it contains both inside and on the surface. Hazelnuts give it a characteristic flavor and make it a different apple cake.

Ingredients

  • 600 g of golden apples (that's about 3 apples). Once peeled and without seeds, they are about 350 g
  • 1 lemon, the skin and the juice (better if it is organic)
  • A little butter and flour to prepare the mold
  • 200 g of sugar (can be brown sugar)
  • 50 g of hazelnuts
  • 3 eggs
  • 1 lemon or vanilla yogurt (125g)
  • 70 g of margarine (you can also use butter)
  • 200 g of wheat flour
  • 1 pinch of salt
  • 1 envelope of Royal type yeast

Preparation

  1. We peel the lemon (only the yellow part) and reserve that skin.

  2. We peel, core the apples and cut them into slices. We put them in a bowl together with the lemon juice, mixing everything well so that the apples do not oxidize. We booked.

  3. Spread with butter and flour a mold about 23 cm in diameter. It can also be larger, 24 or 26 cms.

  4. We put the sugar, the lemon peel and the hazelnuts in the glass. We program 10 seconds, speed 7.

  5. Add the eggs, yogurt, margarine, flour, salt and yeast. We program 30 seconds, speed 5.

  6. We preheat the oven to 180º.

  7. We put half of the dough in the mold and spread it well over the entire surface. We put part of the apples, creating a single layer, without overlapping the sheets. We put the rest of the dough on them. We finish our cake by covering that dough with the remaining apple slices.

  8. Bake at 180º for approximately 1 hour (or for 40 minutes if we do it in a 26 cm diameter mold)

Notes

Hazelnuts can be substituted for another dried fruit such as walnuts or almonds.

    But can butter or margarine be substituted for virgin olive oil?
    I make all the cakes that I make with oil, could you tell me the amount of oil I have to use in this or the equivalence between butter or margarine and oil? In the cakes it can be substituted but I do not know the equivalence.
