La bolzanina sauce has its origin in Alto Adige. Its name says it all since Bolzano is an Italian capital city of this region. Both Italian and German are spoken there, so this sauce is also known as Bozner Soße or Bozner Sauce.
It is usually served with white asparagus although I have used these greens which are also very rich when steamed.
