Mixed fruit sponge cake

fresh-fruit-cake-1

This Fruitcake is loaded with them. I have put apples, bananas and kiwis in it, but you can do it with whatever you have at home.

That fruit remains on the surface, baked, as we did with him apricot cake.

In this case, once out of the oven, we will bathe it with the same fruit juice, the one that has released when marinating with sugar.

Great! Since we don't have children at home, I added a tablespoon of rum to the fruit juice.

How fast, Josseline! By the way, I think it's great about the teaspoon of rum. And, whoever has children, can always pour a splash on their cake slice 😉
      Thanks for telling us!

I have followed your recipe to the letter and I had a dough so hard that the blades of the machine were blocked so I decided to add another 30 grams of milk to try to make it more manageable. Even so and with everything it was practically impossible to mix it with whites to the point of snow. Discouraged, I put it in the mold, added the fruits without any conviction and put it in the oven. My surprise was that the cake was taking shape, after fifty minutes I covered it with aluminum foil and left it for another fifteen minutes. The result was excellent. It is very good although I still do not understand why the dough was so hard and what would have happened if the amount of milk was not changed. Is 30 grams of milk correct? I understand that your recipe has been here for three years and I don't know if you'll ever read me. Greetings and thanks for your time.

      Hello Paco!
What you tell me can happen when we use flour. Not all are the same and some absorb more liquid than others. The important thing is that you solved the recipe great by adding a little more milk.
And of course we read you! The blog is a few years old but we continue to publish and try to solve your doubts.
I'm glad you liked the cake 😉
      A hug!
