We give you an idea to cook an aubergine. We will do it using only Thermomix since here we will cook the vegetables, prepare the tomato sauce and melt the cheese.

Usually the term pizzaiola It is used for meat (I leave you our recipe for pizzaiola meat in case you want to take a look) but being something so simple it lends itself a lot to reinterpretations. We encourage you to try this version made with slices of aubergine. As a starter or as a side dish, you will discover a new way to consume this vegetable.

A different way of consuming aubergines: steamed, with tomato sauce and mozzarella.

Ingredients

  • 100 g de mozzarella
  • 1 eggplant
  • Sal Island
  • 90 g of tomato passata (can be substituted for crushed tomato)
  • Dried oregano
  • 1 teaspoon of sugar
  • 20 g of extra virgin olive oil
  • 500 g of tap water

Preparation

  1. We chop the mozzarella with our hands and put it in a colander. We can also chop it in Thermomix, putting it in the glass and programming 5 seconds at speed 5. We reserve it in a strainer to release the liquid.

  2. We wash the aubergine and cut it lengthwise into thin slices.

  3. We put the slices of aubergine spread on a cloth and we salt them. We let them rest for half an hour.

  4. After that time we put them under the stream of cold water and then we dry them with kitchen paper or with the cloth that we have used before. 

  5. We put the extended aubergine slices in the container and on the varoma tray. We put the lid and reserve.

  6. We put the tomato, part of the oregano, the salt, the sugar and the oil in the glass. We program  3 minutes, 120 on TM5 or varoma temperature on TM31, speed 1. We take out and reserve.

  7. We put the water in the glass and place the varoma container with its position. We program 20 minutes, varoma temperature, speed 1.

  8. We carefully remove the lid of the varoma and put a little tomato sauce on each slice of aubergine and on top of it the mozzarella. We put the cover back on and program 3 minutes, varoma temperature, speed 1.

  9. Serve hot, with oregano sprinkled over the mozzarella.
