Banana sponge cake pudding

Preparation

1. In our Thermomix glass we add the 500 ml of whole milk, the 4 egg yolks, the 135 g of sugar, the tablespoon of vanilla extract and the 50 g of cornstarch. We schedule during 10 seconds at speed 4. Once beaten and mixed, we program again for 6 minutes at 90 ° at speed 3.

2. We observe that the cream has set well. If you think it needs a little more, we will schedule it for a few more minutes. We add the 50 g of soft butter and re-program others 20 seconds at speed 3. We take the cream out of the glass and set it aside.

3. In a bowl we add the 2 glasses of hot water, the two tablespoons of sugar and the two tablespoons of soluble coffee. We stir well.

4. In a square dish we are going to place the cakes soaked in the coffee mixture. Fill the entire base and then add the layer of pastry cream. Then we will place the banana slices and finally we put another layer of sponge cakes soaked with the coffee.

5. In the clean glass we place the butterfly and add the 500 ml of whipping cream and the 110 g sugar. We whip the cream by programming 50 seconds at speed 3,5. The time we indicate is indicative, it will depend on how cold the cream is. This time may be sufficient, but it may take longer. You have to be careful not to overdo the shake.

6. We pour our whipped cream covering the entire cake. It is not necessary to smooth the surface well, you can see the movements of the spoon to make it rustic. We make crumbs a few pieces of the cake and decorate the cake. To serve it, we can freeze it for about 20 minutes to be able to cut it much better. Still we serve it very cold.
