Let's get warm with this rich meat, vegetable and legume soup. 

The good thing about this dish is that it is prepared using only the glass and the basket. It is in the basket where we are going to cook the meatballs, while we prepare the soup.

One of the characteristics of these meatballs is that they do not carry egg. We are going to replace it with a mixture of oat flakes and milk. In the video we have prepared for you you can follow all the steps to prepare the recipe.

Ingredients

  • 250 g of minced meat
  • 90 g of breadcrumbs
  • Dried aromatic herbs
  • A little bit of salt
  • A little ground pepper
  • 40 g of milk and 30 g of oat flakes
  • 10 g cornstarch
  • 1 small onion, quartered
  • 1 bunch of celery in pieces
  • 1 carrot peeled and in pieces
  • 30 g of extra virgin olive oil
  • 120 g green beans, chopped
  • 750 g of vegetable broth
  • 240 g of cooked beans (can be canned, but without the liquid)
  • 35 g tomato passata (or crushed tomato)

Preparation

  1. Put the minced meat, the aromatic herbs, the breadcrumbs, the salt, the pepper and the mixture of oats and milk in the glass. We will make this mixture of oats and milk by mixing both ingredients in a small bowl. We program 20 seconds, left turn, speed 4.

  2. We form small meatballs with that dough and we pass them through the cornstarch. We put them in the basket.

  3. We wash and dry the glass.

  4. We put inside the onion, celery and carrot. We program 5 seconds, speed 5.

  5. We lower with the spatula what has remained on the walls of the glass.

  6. Add the olive oil and, without putting the beaker, program 3 minutes, 120º, left turn, speed 1.

  7. Add the green beans, broth and tomato. We program 15 minutes, 100º, left turn, speed 1.

  8. Add the salt and the beans. Place the basket with the meatballs inside the glass and program 20 minutes, 100º, left turn, speed 1.

  9. Put the meatballs in a soup tureen or deep dish (we use the spatula to remove the basket from the glass) and the soup. We serve immediately.
