At home we are celebrating. But of a simple celebration, with a lemon cream tart and fresh fruit, ideal for children.

With the amounts that I put below you can make even two pies like the one in the photo. If you only want to make one, you will have half of the cake left over (which you can use for breakfast) and also lemon cream. You can put that cream in jars and you will have a delicious dessert for the next few days.

The fruit that you see on the surface can be replaced by another, but with this flavor combination (mango, blueberries, strawberries...) I guarantee that your cake will be delicious.

We will give the shine to the fruit with that magical mixture that I was telling you about the other day in the banana and apple cake.

Ingredients

For the Genoese sponge cake:

  • 6 eggs
  • 100 g of sugar
  • 220 g flour

For the syrup:

  • 80 g of sugar
  • 130 g of water
  • The juice of lemon 1 / 2

For the lemon cream:

  • The grated skin of a lemon
  • 120 g of sugar
  • 250g milk
  • 50 g flour
  • 60 butter g
  • 130 g lemon juice

For the surface:

  • 375 g of fresh berries (double if we want to make two cakes)
  • 1 mango

For the shine:

  • 50 g of sugar
  • 50 g of water
  • A splash of lemon juice
  • 5 g cornstarch

Plus:

  • some chocolate sticks

Preparation

  1. To make the cake, preheat the oven to 170º. We fit the butterfly into the blades and put the eggs and sugar in the glass. we program 6 minutes, 37º, speed 4.

  2. After that time we reschedule 6 minutes, speed 4 (now without temperature).

  3. Add the flour, pouring it around the butterfly. we program 4 seconds, speed 3. We remove the butterfly and finish integrating everything with the spatula.

  4. We put the mixture in a removable mold of about 26 centimeters in diameter. Bake at 170º (preheated oven) for approximately 20 minutes.

  5. When the time is up, we check that it is done. Remove it from the oven and let it cool. We wash and dry the glass.

  6. To make the syrup, we put all the ingredients of the syrup in the glass (water, sugar and juice) and program 12 minutes, 100º, speed 2. We remove from the glass and let it cool.

  7. Now we prepare the lemon cream. Put the lemon peel and the 120 grams of sugar in the clean and dry glass. we program 15 seconds, speed 10. We lower with the spatula what has remained on the walls of the glass.

  8. Now add the milk, flour, butter and 130 grams of lemon juice. we program 7 minutes, 90º, speed 4. We remove from the glass and let it cool.

  9. We can do the shine for the fruit in a small saucepan. We put in it the water, sugar and lemon juice. Dissolve the cornstarch in a small glass together with the rest of the water (10 grams). When the mixture that we have in the saucepan is very hot, add the dissolved cornstarch and mix well. We put out the fire and let it cool.

  10. To assemble the cake we divide the cake in two, horizontally. With each half we can make a cake. If we only need one, we will reserve the other half to eat for breakfast or for other preparations.

  11. We bathe our cake base with the syrup.

  12. With a few rods we remove the lemon cream well, so that it is not caked. We put the amount we consider on the cake. I have left over and I have put it in jars to have for dessert another day.

  13. Wash and chop the red fruits. Peel the mango and chop it too. We place our futa on the lemon cream.

  14. We paint that fruit with the brightness that we have prepared before, using a pastry brush.

  15. We keep the cake in the fridge until it is time to blow out the candles.

  16. Especially if it is for children, we can put some chocolate sticks, poking them into the cake.
