Carrot and almond cupcakes

Preparation

1. In our Thermomix glass we put the 250 g of carrot in pieces and the skin of the lemon. We schedule during 20 seconds at speed 5.

2. We throw the 4 eggs and we return to program 10 seconds at speed 4. We lift the lid and with the help of the spatula we lower the ingredients to the bottom of the glass.

3. Add the 80 g of wheat flour, the 300 g of ground almonds, the envelope of baking powder and the pinch of salt. We mix it for 1 minute at kneading speed.

4. We lift the lid and if we observe that it has not been mixed well, we remove it with the spatula. We cover again and program others 30 seconds at speed 3,5.

5. Prepare the muffin capsules and heat the oven to 200. Pour the dough into the capsules, not filling them to the top to leave a little space when they rise. We put it in the oven between 15 and 20 minutes. Check with the help of a toothpick if the dough is done. When they are baked, let them cool.

6. We prepare the frosting. In our clean glass we put the 300 g of cream cheese and the 100 g of sugar. We mix it for 1 minute at speed 3,5.

7. Add the 100 g of soft butter and the tablespoon of vanilla extract. We reprogram 1 minute at speed 3,5.

8. We put the cream inside a pastry bag with a large, curly nozzle.

9. Decorate the cupcakes with the frosting making the shape of cupcakes. You can watch the video to see how the decoration is done. Decorate the cupcakes with a little grated carrot.
