Ingredients
For the cake
- 500 g of raw carrot
- 325 g of wheat flour
- 225 g brown sugar
- 50 g of white sugar
- 3 eggs
- 100 g butter at room temperature
- 125 ml of sunflower oil
- 80 g walnuts
- 2 teaspoons of baking powder
- 1 teaspoon baking soda
- half a teaspoon of salt
- 2 teaspoons ground cinnamon
- half a teaspoon ground ginger
- half a teaspoon of cardamom
- half a teaspoon of grated nutmeg
- half a teaspoon of ground black pepper
- a teaspoon of vanilla extract
- a tablespoon of butter to grease the mold
For the cream or frosting
- 265 g of white sugar
- 200 g of cream cheese type Philadelphia
- 390 butter at room temperature
- a handful of walnuts to decorate
Preparation
We can start heating the oven to 200 °. We place the 80 g of walnuts in our Thermomix glass and chop them a little, the pieces have to be somewhat chubby so that we can find them inside the cake. We barely program 2 seconds at speed 6. We take out the walnuts and reserve them.
In the same glass without cleaning we add the 225 g of brown sugar and pulverize it. We continue adding all the dry ingredients: the 225 g of flour, the two teaspoons of baking powder, the teaspoon of baking soda, the half teaspoon of salt, the two teaspoons of ground cinnamon, the half teaspoon of powdered ginger, the half a teaspoon of cardamom. half a teaspoon of ground black pepper and half a teaspoon of nutmeg. We are going to mix it with our Thermomix and program 10 seconds at speed 4. We put the mixture aside in a bowl to add it later.
In the glass without cleaning we add the carrots in pieces and we are going to grate them but not too finely. For this we program during 25 seconds at speed 4,5. We remove the carrot from the glass on a plate where previously we will have placed kitchen paper. We have to make the paper absorb the water released by the carrot, so we will place another double layer of paper on top and squeeze with our hands to soak it.
In the same glass without cleaning we add the 100 g of butter and we are going to mix it with the 50 g of white sugar. We program it 30 seconds at speed 4. Next we add the 125 ml of sunflower oil, the teaspoon of vanilla extract and an egg. We schedule it during 1 minute at speed 4. While it is mixing we pour the remaining eggs through the mouth of the lid one by one.
The rest of the ingredients that we have left to add we will incorporate little by little. We add half of the dry ingredients and program 30 seconds at speed 4. Next we add the carrot and program another 30 seconds at speed 4. Finally we add the other half of the dry ingredients and program 30 seconds at speed 4.
We pour everything into a 25 cm diameter mold that is greased with butter, and we are going to bake for 1 hour. After 15 minutes in the oven I had to place a piece of aluminum foil so that its surface does not burn before making the cake. However, you have to check that the cake is made by putting something sharp into the dough. If it comes out totally clean, then you have your recipe ready. .
To make the cream: in our clean glass we add the sugar and we are going to pulverize it during 20 seconds at speed 7. We remove the sugar from the glass and reserve it. We put the butter in the glass and program it for 30 seconds at speed 3,5.
Add the cream cheese and half of the reserved sugar, and program 40 seconds at speed 3,5. We finish by adding the rest of the sugar and beat again during 40 seconds at speed 3,5. We will have the cream ready.
When the cake is cold, we unmold it from the pan and cut it in half. We fill the center of the cake with the cream that we had prepared. The rest of the cream will be put in a pastry bag with a wide and curly nozzle. We decorate the edges of the circumference of the cake with a little cream and in the center we make decorative circles with the pastry bag. We can finish decorating the cake with a little chopped walnuts.
