Today we add another cold cream to our recipe book. The truth is that, with this heat, our body already only asks us for light and fresh things. That is why gazpachos or cold creams, like this one with carrots, are a classic.
This vegan recipe I like it because it is made with very simple ingredients that we can find in the market throughout the year. It has a sweet flavor, thanks to the carrot, which we will enhance with some mint leaves that will give freshness to our plate.
This recipe should be made with in advance to give it time to cool down. We can even make it the day before and leave it refrigerating until serving time. It is perfect to take and eat at the office as it is transportable and does not need to be heated.
We can lighten the cold cream carrot to our liking adding a little more vegetable broth. Or thicken it up by adding a little yogurt or cheese spread.
