We continue to think of recipes for the holidays. Today I propose an aperitif that I love: some toasts or canapés with celery pesto and fresh cheese.

The good thing about this starter is that the pesto can be prepared in advance (it keeps very well in a glass jar as long as we cover it with a drizzle of oil). It's loaded with flavor and it's more or economic sector. than the traditional Genoese pesto because it has almonds instead of pine nuts and celery leaves instead of basil.

Ingredients

For the pesto:

  • 40 g of Parmesan cheese
  • 40 g almonds
  • 50 g of celery leaves
  • 25g celery stalk celery
  • Sal Island
  • Black pepper
  • 1 piece of garlic (raw or blanched, if we want it not to be so strong)
  • 60 g of extra virgin olive oil

For the toasts:

  • Toasted bread
  • Fresh cheese (our favorite)
  • Anchovies and / or olives

Preparation

  1. We toast the almonds in a frying pan.

  2. We put the almonds in the glass. Also the Parmesan cheese in pieces. We program 5 seconds, speed 7.

  3. We wash and dry the celery leaves well and put them in the glass. We put the 25 g of stem, also clean. Add the salt, pepper and a piece of garlic. We program 5 seconds, speed 8.

  4. We lower with the spatula what has remained on the walls of the glass and reprogram them 4 seconds, speed 8.

  5. Now we add the oil and program 10 seconds, speed 5.

  6. We keep it in the refrigerator, in a glass jar with a lid. Before closing the jar, add a drizzle of extra virgin olive oil to cover the pesto.

  7. To make the canapés we spread the pesto on the bread slices and then we put a quality fresh cheese on top. Decorate with pieces of olive and / or anchovy.

Notes

This pesto can also be served with any type of pasta, adding a little cooking water for the pasta in each dish so that everything is well integrated.
