This cake is created for fruit lovers. If you like cherries you have a cake like this simple and fast so you can do it with your Thermomix.
A quick and whipped mixture is made that we will add in a pan with the base cherries. So far we already have the cake, but if you also want to add a delicious crumble you also have the option.
The crumble in a crunchy layer are flavored with butter to give that extra and special flavor to many desserts. It will also be covered with a layer of very sweet icing sugar. Cherry pie with crumble
A simple and spectacular cake, to take advantage of the cherries and make a healthy cake with fruit. This dessert is accompanied by a crumble to make a crunchy, buttery-flavored layer.

Ingredients
Pie
- 85 g of wheat flour
- 125 g of sugar
- 100 g soft butter
- 200 g cherries
- 250 ml whole milk
- 4 eggs
- 2 teaspoons of vanilla extract
- 1 pinch of salt
- Zest of a lemon
- 1 tablespoon of butter to grease the mold
- 2 tablespoons of sugar to sprinkle with the butter
Crumble and decoration
- 15 g of sugar
- 15 g of wheat flour
- 15 g of ground almonds
- 1 pinch of salt
- 25 g soft butter
- 2 tablespoons of powder sugar to sprinkle
Preparation
To prepare this delicious dessert you have to pit the cherries. It is very simple, we take something similar to a stick or a rigid straw, we center it on the cherry (where the hole of the tail) and we push. In this way we are removing the nugget. We wash the cherries and reserve them.
We heat the oven to 180 °. In our Thermomix glass we add the 4 eggs and beat them, programming 5 seconds at speed 4.
Then we add the rest of the ingredients: 85 g of wheat flour, 125 g of sugar, 250 ml of milk, 100 soft butter, a pinch of salt, the lemon zest, the 2 tablespoons of vanilla extract. We schedule it during 20 seconds at speed 4.
In a pan of 18 cm in diameter, spread the inside of butter and sprinkle a few tablespoons of sugar. Place the cherries at the base and pour the mixture out of the glass. We put it in the oven in the central part, with heat up and down, about 30 minutes. How each oven heats differently, we will observe at 20 minutes if it is already curdled, for this we introduce a stick and it should come out clean.
We clean the glass and make the crumble. Add the 25 g of soft butter, the 15 g of wheat flour, the 15 g of ground almonds, the 15 g of sugar and the pinch of salt. We mix and program it 10 seconds at speed 3,5.
When the cake is made we will add the crumble. You have to take portions of this dough, squeeze it with your hands and allow pieces or lumps to fall, but without crumbling. We add it to the entire surface and put it back in the oven with heat on top for 20 minutes at 170 °.
Once finished baking we will let it rest, we unmold it and toss the powdered icing sugar on top. It is a great cake, soft on the palate and crunchy on the crumble, I hope you like it.
Notes
This cake can be made with cornstarch flour for those intolerant to gluten. You just have to substitute the amount of flour for the cornstarch. The same can be done with the crumble.
