We love the chicken croquette. And with the return to school they cannot be missing in the freezer. Once made and frozen, they are the «wild card» dinner, which we can have ready in a few minutes and without complications. It is best to serve them with a good salad to compensate for the frying.

Ingredients

210 g of roast chicken
45 g of extra virgin olive oil
90 butter g
50 g onion
170 g flour
1 teaspoon of paprika
800g milk
Sal Island
1 or 2 eggs, beaten
Bread crumbs

Preparation

We put the chicken (already cooked) in the glass and chop it with several turbo strokes. We take out and reserve.
We put the oil, butter and onion in the glass. We program 2 seconds, speed 5.
We schedule below 3 minutes, 100º (or 120º on the TM5), speed 1.
We add the flour and the paprika. We program 3 minutes, 100º (or 120º on the TM5), speed 2.
We incorporate the milk and salt. We program 10 seconds, speed 6.
We put two tablespoons of the chicken that we minced at the beginning in the glass and program 8 minutes, 100º (or 120º), speed 4.
We let the dough rest in the glass for a couple of minutes. Add the rest of the minced chicken and mix well with the spatula.
We spread our dough in a large bowl and let it cool, first at room temperature and then in the refrigerator.
After a few hours we shape the croquettes using a couple of spoons and we coat them first in beaten egg and then in breadcrumbs.
Once formed we can fry or freeze them.

Notes

It is best to freeze them on a wide tray, even better if we cover it with greaseproof paper. The idea is that they are well spread so that they freeze without sticking together. Once frozen like this, well separated, we can keep them in a plastic bag.
