If homemade croquettes are always a delight, imagine if they are chorizo. It goes without saying that the little ones like them a lot… and it is reflected in the video.

It lasts a little over 4 minutes because there are many steps. We show you how to make the dough in Thermomix, a little trick to put the dough in a pastry bag and an idea to bread them. You will even see the frying. In short, all the steps I have followed, from start to finish.

Of course, you can form them in the traditional way1, with a couple of spoons. We just give you an idea, then choose the method that is most comfortable for you.

Ingredients

  • 80 g of chorizo
  • 40 g of extra virgin olive oil (10 + 30)
  • 50 butter g
  • 20 g of spring onion
  • 90 g flour
  • 400 g milk at room temperature
  • A little nutmeg
  • A little ground pepper
  • A little bit of salt
  • Bread crumbs
  • 2 eggs
  • Frying oil

Preparation

  1. We put the chorizo ​​in the glass and chop it in turbo speed, 1 second, twice.

  2. We lower with the spatula what has remained on the walls of the glass.

  3. We add 10 g of extra virgin olive oil. We program 3 minutes, 120º, spoon speed. We put a colander over a small bowl and drain the chorizo, putting it in the colander. We booked.

  4. We put the rest of the olive oil (30g), the butter and the chives in the glass. We program 5 seconds, speed 5. We schedule below 3 minutes, 120º, speed 1.

  5. We add the flour and program 3 minutes, 120º, speed 2.

  6. Add the milk, nutmeg, pepper and salt. We mix by programming 10 seconds, speed 6. Next we program 8 minutes, 100º, speed 4.

  7. We add the chorizo ​​that we had reserved and program 10 seconds, left turn, speed 5.

  8. Let the mixture cool for a few minutes in the glass. Next we put the dough in a pastry bag.

  9. We reserve the dough in the refrigerator where it will be at least 4 hours.

  10. To shape the croquettes, cut the nozzle of the pastry bag with a knife or scissors.

  11. We prepare a tray and cover it with breadcrumbs. We are forming strips of dough on the tray.

  12. We then cut these strips with a knife.

  13. We pass the croquettes for beaten egg and for more breadcrumbs.

  14. We fry the croquettes in plenty of hot oil. And… ready!
