We love making cakes this simple and full of flavor. It is a very easy dessert in which you will have to put a bit of your hands to make the shape of the cake ... but everything else is much easier than you imagine.
The Linzer Cake is already known as one of the oldest cakes found in history and stands out for its amazing dough made of butter, egg, flour, lemon and ground nuts, in this case we have chosen the almond.
With the dough ready in our Thermomix we form the cake, fill it with jam and cover it with star-shaped pieces. The result looks delicious and its flavor is smooth, crunchy and very sweet.
Linzer Christmas Cake
This cake has an exquisite composition. Its dough has an almond flavor and creamy texture that combines perfectly with the sweet blueberry jam.

Ingredients
- 180 g butter at room temperature
- 125 g of almond flour
- 235 g of wheat flour
- 145 g of sugar
- Yolks 2
- a level teaspoon of ground cinnamon
- a teaspoon of lemon zest
- a tablespoon of whole milk
- a quarter teaspoon of salt
- 400 g of blueberry jam
- an egg to spread the surface of the cake
- 2 tablespoons of powder sugar to sprinkle
Preparation
We start by kneading the dough: in our glass we add the 145 g of sugar and we are going to pulverize it by programming 10 seconds at speed 7. We add the 180 g of soft butter and mix it 10 seconds at speed 3,5
Add the rest of the ingredient: the 125 g of almond flour, the 235 g of wheat flour, the two egg yolks, the level teaspoon of ground cinnamon, the teaspoon of lemon zest and the quarter teaspoon of salt. We knead it during 3 minutes at kneading speed.
If we observe that the mixture has not been done well, we turn the dough with the spatula and re-program during another minute at kneading speed. We remove the dough from the glass and put it in a bowl to cool for 30 minutes in the refrigerator.
We prepare a round cake of about 18 centimeters in diameter. We place a baking paper at its base and some strips under the paper to be able to take the cake up when it is finished.
On a table we place a stretched baking paper and we will put the dough on top. With a roller we stretch in a round shape until it is large enough to cover the whole of the pan.
As we have kneaded it on baking paper, we can transfer the dough much better into the pan. We will observe that it is a bit difficult to handle and that something will be destroyed, but do not worry, place it as you can and with your hands you can fix it. If there are areas that are thin with dough, we can repair it with pieces of dough that are left over from the sides.
With the well-formed and compact dough we can add the blueberry jam. We knead the dough that we have left over again and form cookies in the shape of stars of different sizes. We place the cookies on the surface of the cake and add beaten egg with the help of a brush so that its surface is browned once it is baked.
We put it in the oven at medium height, at 180 ° for 30 minutes or until we see that it has become golden. We take it out and let it cool. If we want we can put it in the refrigerator to serve it colder. Before serving, sprinkle with a little icing sugar.
