Cinnamon Roll Cake – Cinnamon Roll Cake

Preparation

1. We start by preparing the Cinnamon Roll pasta. In our Thermomix we add the 75 g of soft butter, the 100 g of brown sugar, the tablespoon of wheat flour and the teaspoon of cinnamon powder. We schedule it during 20 seconds at speed 3.

2. It will form as a kind of somewhat compact paste. We took it out of our glass and reserved it.

3. In the same uncleaned glass add all the dry ingredients: 375 g of wheat flour, 200 g of sugar, a pinch of salt and two teaspoons of baking powder. We mix it programming during 15 seconds at speed 2,5.

    

4. Melt the 100 g of butter for 1 minute in the microwave at low power. Add the butter, the two beaten eggs, the 2 teaspoons of vanilla extract and the 300 ml of milk. We mix it for 40 seconds at speed 3,5. 

5. We observe the mixture and give it a small turn with the spatula. We cover again and program during 15 seconds at speed 3,5.

6. We heat the oven to 180° with heat up and down. Prepare a rectangular mold to make plum cakes, approximately 28 cm long. We spread it with butter.

7. Add 2/3 parts of the cake mix. Above and with the help of our fingers we crumble the compact mixture of cinnamon. Stir in a zig-zag pattern with the help of a teaspoon. Cover with the rest of the sponge cake dough and smooth the surface.

8. We put it in the oven and place it in the middle part. We bake it for 20 minutes. We take a piece of foil, open the oven and quickly cover the cake. We close again and bake it for another 20 minutes.

9. To know if the cake is done we will prick it with a needle. It has to come out clean and without remains to make sure it's ready. If it doesn't come out smooth, we'll let it bake for a few more minutes.

10. Take it out of the oven, let it cool before unmolding it.

11. Prepare the glaze, where in a bowl we will mix 125 g of icing sugar with one or two tablespoons of milk. We are adding the milk little by little and stirring at the same time, we observe when it begins to thicken and is somewhat compact.

12. Cover the cake with the glaze, decorate with the blueberries and cut into slices.
