Coca de San Juan filled with cream

A few days ago, Esther suggested us in a comment that we make a Coca de San Juan stuffed with cream, and here is my proposal.

Cocas de San Juan recipes surely there are almost as many as families that cook them. I give you my version that adapts to our tastes at home and the ingredients that I have been able to get. In any case, if you want to share your family recipe, I encourage you to do it. There are still a few days until the night of San Juan and I would be happy to adapt one. We have already eaten the one in the photo!

La custard cream of the surface is made following the recipe in the basic book, but I remind you that in this blog you have another more original: a pastry cream made with condensed milk.

    First put orange zest but then it is lemon, it does not put when to add the sourdough, nor does it add a pinch of salt like all masses, this recipe is a disaster

      You're right about the citrus zest. Put the one you have at home or the one you like the most. Both with orange zest and lemon zest work well. Thanks for telling me, now I correct it.
      About the sourdough, I invite you to read the recipe again because it is written. It is added together with the flour, as in most of the doughs.
      In this case it does not have salt but, if you prefer, you can add it. It sure looks even better on you.

    Hello, in the recipe you put the sourdough in the glass for about two hours, and to take advantage of that time we make the cream in the glass. My question is: does the sourdough with the flour have to be in the thermomix glass for those two hours? Or can it be taken out of the glass, to be able to make and take advantage of the time?       You can take it out of the glass and put it in a bowl, so you will have your Thermo available to make the cream or other preparations.
