Cocas de San Juan recipes surely there are almost as many as families that cook them. I give you my version that adapts to our tastes at home and the ingredients that I have been able to get. You're right about the citrus zest. Put the one you have at home or the one you like the most. Both with orange zest and lemon zest work well. Thanks for telling me, now I correct it.
About the sourdough, I invite you to read the recipe again because it is written. It is added together with the flour, as in most of the doughs.
In this case it does not have salt but, if you prefer, you can add it. It sure looks even better on you.

You can take it out of the glass and put it in a bowl, so you will have your Thermo available to make the cream or other preparations.
