Today's cookies are for everyone. Also for those who cannot take gluten, dairy and / or eggs.

Are fluffy, squishy, and are prepared in a moment without the need for seals, pasta cutters or rollers.

The cleanest is not the cleanest but the least dirty, right? Well, in the video you will see that putting the dough on baking paper We won't even stain the countertop.

Easy to prepare and delicious cookies. They are made with rice flour and grated coconut.

Ingredients

  • 50 g of cane sugar
  • 250 g of rice flour
  • 100 g of grated coconut
  • 8 g of yeast
  • 30 g of sunflower oil
  • 130 g of vegetable milk (rice, oatmeal ...) or cow's milk

Preparation

  1. We put the sugar and the rice flour in the glass. We program 20 seconds, speed 10.

  2. We add the coconut, the yeast and the oil. We put the blades in speed 3 and, with the goblet on, we pour the milk over the lid.

  3. We stop the blades when all the milk has fallen into the glass.

  4. We put the dough on the counter, on greaseproof paper (so as not to stain)  and we prepare a tray covered with baking paper.

  5. We put a little water in a bowl to moisten our hands. With wet or damp hands we are taking portions of dough and forming balls.

  6. As we form the balls, we place them on the tray, on the baking paper.

  7. Bake at 180º for approximately 15 minutes.

Notes

The dough is not compact at all (you can see the texture in the video) but we can perfectly make the balls if we moisten our hands with water.
