Perhaps the most difficult thing will be to find the wafers… I don't know where it is sold in Spain. In convents or in candy stores you may find them. In Italy they are sold in pharmacies and they have a round shape because they are the ones used in churches ... funny.
By the way, the recipe is from my mother. You can find another in the Pastry and Pastry book with Thermomix but for my taste it has too much egg and they don't come out like the ones we find in Murcian confectioneries.
What do you prefer, the easter cakes or the cordial ones? Two sweets with the almond as the protagonist, difficult choice ...

You just have to open that second egg, put its yolk and white on the plate and beat everything. An egg usually weighs about 60 g so, by putting 30 g of that mixture, you will have solved the problem 😉
