How rich are the cordial! With angel hair inside, a delicious almond flavor and a wafer that collects everything at its base.
Perhaps the most difficult thing will be to find the wafers… I don't know where it is sold in Spain. In convents or in candy stores you may find them. In Italy they are sold in pharmacies and they have a round shape because they are the ones used in churches ... funny.
By the way, the recipe is from my mother. You can find another in the Pastry and Pastry book with Thermomix but for my taste it has too much egg and they don't come out like the ones we find in Murcian confectioneries.
What do you prefer, the easter cakes or the cordial ones? Two sweets with the almond as the protagonist, difficult choice ...
Cordial
Some spectacular cordials typical of Murcian Christmas. Very simple ingredients that, combined, become a delight. How rich!

Ingredients
- 500 g raw almonds
- 200 g of sugar
- The skin of 1 lemon and a half, better if they are organic (only the yellow part)
- 1 egg and a half
- Angel hair (1/2 pot)
- Wafers
Preparation
We put the almonds in the glass and chop them with several turbo strokes. It has to be crushed into small pieces. We remove them from the glass and reserve.
We put the sugar in the glass very dry and pulverize programming 20 seconds, progressive speed 5-10. Add the lemon peel and program 20 seconds, progressive speed 5-10.
Add the egg and a half and mix by programming 10 seconds, speed 4. Add the reserved almonds and mix 10 seconds, speed 3, or until everything is integrated. We remove the dough from the glass to a container and let it rest for a few minutes.
We prepare the wafers - each one must have an approximate size of 4 × 4 cm if they are square or 4 cm in diameter if we prefer them round. We place them on a baking tray lined with baking paper or silicone sheet.
Now we are shaping the cordials (in the photo you can see how I do it). We take a piece of dough and make a ball with both hands, as if it were a meatball. We flatten it on one hand, put angel hair in the center and give it a cordial shape (they are like mountains). Now we put the cordial on the wafer.
When we fill a tray with cordials, we bake them in a preheated oven at 180º. In about 15 minutes they will be ready.
If you can't find the wafers, you can make a ball of dough with the angel hair inside. Then you give it a cordial and baked form.

You just have to open that second egg, put its yolk and white on the plate and beat everything. An egg usually weighs about 60 g so, by putting 30 g of that mixture, you will have solved the problem 😉
