Cottage cheese and almond cake

cottage cheese-and-almond-cake

To lovers of home baked goods ... here is a new cake of the easy and rich. Take a look at the ingredients because the only thing that you will surely have to write down on your shopping list is cottage cheese, the others are the kind we usually have at home.

It has a mild flavor in which the anise and it is also one of those cakes that are high and fluffy, which contrasts with the crunchy surface of toasted almonds. And best of all, it is prepared in a flash: with our Thermomix we will mix all the ingredients of the dough in less than 1 minute.

I encourage you to prepare it because you will like it. You can accompany it with this hot chocolate shake that Ana taught us, you will have the perfect snack for these winter afternoons.

Hmm, what it looks like !!!!! A little question: I don't like anise at all, nothing. Will the cake lose a lot if I don't throw it to them? Or can I substitute it for another liquor? Thanks!!!!!

    1.    Ascen Jimenez said

Sure, Raquel. Use the liquor that you like the most or even orange juice. Then tell me how are you, okay?
      A kiss, ascen

  2.   Luisa said

    How much orange juice?

    1.    Ascen Jimenez said

      Hello Luisa:
You don't like anise either? It does not taste too much and gives it a special touch ... If you opt for orange, put the same amount of liquor as you would. Let's see how ...
      Kisses, ascen

  3.   Fátima said

The same amount of liquor as orange juice, or twice?

    1.    Ascen Jimenez said

      Hi Fatima:
Try the same amount. With the liquor there is a thick mass so don't be surprised if it looks like this.
If you have a ratillo, tell us the result.
      A kiss, ascen

What a pint… a question can I substitute the aní
s for orange blossom aroma with the same amount ??

    1.    Ascen Jimenez said

      Hi Esther,
With orange blossom water it will be great. I would put 10 g in it as well. Tell us later, okay? that surely more than one is encouraged with this ingredient.
      Kisses, ascen

  5.   Leticiq said

Hello!!!! Would it be possible instead of cottage cheese, to put Philadelphia ??? Thanks!

    1.    Ascen Jimenez said

      Hi Leticq,
I don't know how it will turn out with Philadelphia ... but it's a salty cheese and the texture is different ... Can't you try cottage cheese? In any case, if you decide on Philadelphia, tell us about the result later.
      Thank you!
      Kisses, ascen

    Hello,

Can I remove some flour and put chocolate powder on it?
    is for home chocolatiers ...

    1.    Ascen Jimenez said

Sure Pepi! You can even make it bicolor. You make the dough as it comes in the recipe, then you divide it in two and one of those halves you put chocolate powder. You put the two masses in the mold and in the oven!
I hope you all like it.
      A kiss, ascen

        God…. delicious….
If I have time tonight I'll do it and I'll tell you tomorrow.

With 5 minutillos of yours and another 45 from the oven you will have it ready! They will thank you ... 😉

It looks good I'm going to try it to do recently that I have the thermomix to see how it works

    1.    Ascen Jimenez said

Great, Paqui. I hope you like it as much as we do. You will see how little it takes to get hooked on the machine and become an expert 🙂

CHAPEAU Ascen !!!. Very easy and quick to prepare, I followed the recipe to the letter and it came out like the one in the photo. The anise or cottage cheese is not noticeable in its final flavor. There is a soft, fluffy sponge cake ... and if we put a cup of chocolate next to it ... ... it becomes the perfect snack. And for those who do not have the thermomix, with the mini-primer of a lifetime it is more than enough for their preparation. Thanks.

    Mayte.

Mayte !! What joy you give me with your comment !! There are many readers who had told us that they would try it but then they have not written to tell us what they think. Great that you like it.
      Thank you.
      Kisses, Ascen

    Is the Thermomix a blender?

    1.    Irene Arcas said

Sure Gloria! You can use the thermomix as a blender. Try these recipes, you will see what a delight:

You will tell us about it !!

      1.    Ascen Jimenez said

Hello, Gloria. In this case, if you don't have a Thermomix, you can use a regular blender (it works to mix the ingredients well). It will also look good on you.
        Kisses, ascen

How good this cake must be !!!, have you tried without the almonds ??, the little one does not like anything at all, she is capable of not eating it just for taking them, hahahaha

    1.    Ascen Jimenez said

      Hi Marga,
Do not think about it and do not put them because it also looks very good. The almonds are used in this case to decorate and to have a crunchy touch, but without them it is also very rich.
I hope you like it and especially your girl 😉
      Kisses, ascen

  11.   Eva said

I did it last week. And I have to say that this recipe has been a great discovery !!!! I recommend it ... It is a super soft cake, which withstands very, very well the passage of days (it does not get hard with the days or lose fluffiness) !!!! Of course, there is a "Mr. sponge cake" !!!! (and we are very sweet !!!!) I used orange juice (not anise) and if you use it like I do, add the orange zest to enhance the flavor as well. The orange-curd mixture is spectacular !!! Thank you very much for giving me another recipe that I will make many more times!

    1.    Ascen Jimenez said

      Hello Eva,
Comments like yours really encourage us to keep trying new recipes and to share them on this blog, and they make our day! Is it okay if I add what you told us about orange zest to the recipe? Surely many readers find it useful.
      Thank you!
      Kisses, ascen

  12.   Manu said

OMG !! It has been great for me !! What a danger..because in two breakfasts it has disappeared from my kitchen..thanks !! Terrific, really. It would be nice to come up with a similar recipe with a few fewer calories. Although I guess the taste would not be the same!

    1.    Irene Arcas said

Hello Manu, thank you very much for your message. We are very happy that you liked it, the truth is that it is a cake that is delicious. We will think about how to reduce some calories ... but as you say, it would no longer taste the same! Greetings and thanks for following us 🙂

    2.    Ascen Jimenez said

      Hello Manu:
In two breakfasts? Yes, it is very tasty! 😀
On the page we have other slightly lighter ones. The one with fresh fruit from the other day, for example: http://www.thermorecetas.com/2014/07/19/bizcocho-de-fruta-fresca/
Or the one with carrots: http://www.thermorecetas.com/2013/04/19/bizcocho-de-zanahorias-light/
They are different from cottage cheese, of course, but at my house they don't last too long either 😉
      Thanks for your comment.
      Take care!

  13.   Isabel said

Hi Ascen, could it be made with Philadelphia cheese or something else? is that I can't get the cottage cheese. Thanks

    1.    Irene Arcas said

Hello Isabel, you could substitute it for fresh cheese like Burgos. You will tell us how it looks on you! A hug and thanks for following us.

      1.    Ascen Jimenez said

Irene! That I had not seen that you had already responded to Isabel ... It is clear that Burgos cheese can be a good option 😉
        Thank you very much compi.

    2.    Ascen Jimenez said

      Hello isbael:
Uff ... it's that Philadelphia has nothing to do with cottage cheese ... Maybe try it with fresh cheese, like Burgos, to see how it goes. And then you tell us, okay? In case we can help someone who has the same problem as you.
      Thanks to you.
      Take care!
