Lemon Crackle Cookies

These cookies are quite an appetizer full of lemon flavor and very sweet. We will delight ourselves with this special recipe, full of charm and with a special shape.

We will make a traditional dough for cookie dough, with a soft and smooth texture. Then we will let it cool in the refrigerator to rest and then we can make some balls with the dough.

These little balls will be coated with two types of sugar, so that when they are baked they will have a special crackle and a powdered layer of icing sugar. A tip is that this recipe must be made in detail and without going over the steps, so that they come out perfect.

Ingredients

  • 100 butter g
  • 120 g of sugar
  • 1 egg
  • 300 g of wheat flour
  • 10 g baking powder
  • 1 pinch of salt
  • Zest of a lemon
  • 50 ml lemon juice
  • Plain sugar and icing sugar

Preparation

  1. In our Thermomix glass we add the 100 g of soft butter and the 120 g of sugar. We schedule it during 30 seconds at speed 3.

  2. We add the egg. We reschedule it during 20 seconds at speed 2,5.

  3. Add the 50 ml of lemon juice and the lemon zest. We program during 25 seconds at speed 2,5.

  4. Add the 300 g of trido flour, the pinch of salt and the 10 g of baking powder. We program during 2 minutes at kneading speed.

  5. We remove the dough from the glass and make a ball that we will wrap with plastic film. Put it in the fridge for at least 1 hour.

  6. When we have it ready, we heat the oven to 180°. We will begin to make the balls. They have to have a weight, between 15 and 20 g. We will be able to weigh one and about the same size we begin to do the rest.

  7. Coat them with normal sugar and after with icing sugar. We will place them on a tray that can go in the oven.

  8. Important to do this step: we put it in the oven in the lower part, with heat above and below. We will leave it between 8 to 10 minutes.

  9. When they are ready, we let them cool and we can now enjoy their delicious flavor.
