He had heard very well of the choux pastry, that it is used for both sweet and salty and how simple it was and how good it came out, but all these things you do not believe at all, until you experience it yourself.

I thought it was a great opportunity to try to make this dough with these cream bites for my father's birthday. We were going to eat and, along with a couple of cakes, I brought these delicious nibbles for coffee of the afternoon that we would enjoy, with other family members who would join the celebration.

The truth that everything I had heard was true, is a simple recipe to prepare, they are really great, in the oven they are very grateful, they rise a lot, so we must leave a gap between one and the other so that they do not stick. This paste is used to make profiteroles, lemons, the Saint-Honoré cake, eclairês ...

We can freeze it as soon as it is tempered, or if we want to keep them, they last a few days in the fridge wrapped in plastic.

      Sandra, the best thing for this is to put the oven at 180º with heat only from the bottom and when it is halfway through baking we also put heat on top, because when they are lowered sometimes it is because the heat from above does not let them rise well .

      The world of ovens is a mystery to discover. Make sure that the oven is well preheated and, when you open the oven, close it as soon as possible so that the temperature remains the same.

      I also recommend that you do not make the snacks very something. Make them rather squat but beware ... not flat at all, okay?

      And the cheese thing is to give it consistency. Normally, if those of us who like cream tend to also like cream cheese, so due to the taste there is no problem because they are quite similar. In addition, the amount of cheese is minimal compared to that of cream.
