El cake today is done with cream. By carrying this ingredient we are not going to incorporate butter or oil.
If you do it with normal eggs you will get a white cake. The one you see in the photo has a darker color because the eggs I have used are to make fresh pasta. But you will see, with the eggs that you have at home it will be great.
One more thing, before baking it we are going to put on the surface a icing very easy to prepare. It is so simple that we will not need our food processor. We just have to mix, in a small bowl, the icing sugar, the egg white and the flour. We distribute it later on the surface of our sponge dough, when we have it in the mold and just before baking. You will see how good it is.
Cream cake with crust
The cream allows us not to add butter or oil to this cake. It is very spongy and has a small crust on the surface.
