Cream pepitos for Christmas

Preparation

1. In our Thermomix glass we add the 500 ml of whole milk, the 130 g of sugar, the 50 g of cornstarch, the 4 egg yolks, the 50 g of powdered almonds and the tablespoon of vanilla extract. We schedule it during 10 seconds at speed 4. Once the mix is ​​finished, we program it again with others 6 minutes at 90 ° at speed 3, now it has to set and be creamy. If by chance it has not set, you can schedule another couple of minutes to get it. We take the cream out of the glass and set aside.

2. We clean our Thermomix glass and we are going to make the pepitos. We add the 300 ml of water and the 100 g of butter. We schedule it during 3 minutes at 110 ° at speed 1.

3. It is important not to let the liquid cool down to immediately add the 150 g of wheat flour. We reschedule during 40 seconds at speed 3. We have to have a compact mass.

4. Now is when we have to add the eggs one by one. We will do it through the mouth of the lid while we leave the glass turning at speed 3. We turn the glass and add the first egg and wait 40 seconds. Then we add the second egg and wait 40 seconds.. and so on until the fourth egg, where we will have to wait the 40 seconds. We have to have a firm dough.

5. We put the oven to heat to 180 °. We put the dough inside a pastry bag and that it has a slightly large mouth, it will not be necessary to put a metal or plastic nozzle. We prepare a tray that can go into the oven and we will make the shape of the pepitos, they will be like the typical éclairs or petitsús, with an elongated shape (2-3 cm wide by 8 cm long), then in the oven they will be enlarged.

6. We put them in the oven with heat up and down and in the center. We will let them bake for about 8 to 10 minutes or until we see that they are golden brown. When they are done we let them cool.

7. We put the pastry cream into a pastry bag. Here we can put a metal nozzle so that we can fill the cakes in a better way and without our sleeve bending. We will make a hole in one of the ends of each cake and we will fill it with the cream. They can be filled easily as they are hollow.

8. For the glaze we will clean our glass. Add the 150 g of icing sugar, the 4 tablespoons of whole milk and the tablespoon of cream cheese. We program it for 30 seconds at speed 3. It has to be thick, if not, we will add a little more sugar or cream cheese to thicken.

9. We wait to see how our coverage thickens and if it would be necessary to add another layer. Before they dry, you have to decorate them with our Christmas sprinkles.
